Steps:
- Preheat the oven to 400 degrees F.
- Melt the butter in a small saucepan over medium-high heat. Add the brown sugar and cook, stirring constantly, until it begins to melt, 2 to 3 minutes. Add the garlic and ginger and cook, continuing to stir, for another 1 to 2 minutes. Stir in the vinegar, fish sauce and soy sauce. Bring to a low simmer and let cook for about 5 minutes. Remove from the heat.
- Use a paper towel to thoroughly pat dry the chicken. Sprinkle both sides with salt and pepper.
- Heat a large ovenproof skillet over high heat until very hot. Add the oil. Place the chicken in the skillet skin-side down and let brown without moving it for about 4 minutes. Remove the chicken to a plate and raise the heat to medium-high. Add the brown sugar mixture and use a wooden spoon to scrape up any browned bits. Return the chicken to the skillet skin-side up. Transfer the skillet to the oven and bake, basting the chicken with the sauce midway through cooking, until cooked through, about 20 minutes. For extra-crispy skin, transfer the skillet to the broiler for about 2 minutes. Serve over white rice with sauce.

Delicious! Yummy caramelized legs, kids love these! So quick and easy and no marinating required. Just prepare the sauce, pour over the chicken and pop in the oven! I actually like this with wings better ;-) VERY IMPORTANT TO LEAVE IT IN THE OVEN UNTIL IT HAS CARAMELIZED TO AVOID DISAPPOINTMENT. Thank you to everyone for their positive reviews! - 1. Preheat oven to 275*. In a 13x9 inch baking dish, place chicken pieces. Season with salt and pepper.
- 2. In medium bowl, blend together the oil, soy sauce, ketchup, honey, and garlic and pour over chicken. Bake for 1 hour, basting every 20 minutes. Turn oven up to 375* and continue baking until chicken is deep brown and caramelized, about 15 minutes. 14 points per serving

- 1. Preheat oven to 350. Line a 9x13 pan with aluminium foil.
- 2. Lay chicken out and give them a good sprinkle of salt and pepper.Put them in the prepared pan.
- 3. In a glass measuring cup measure out the honey , soy sauce, and catsup. Add minced garlic and stir. If mixture doesn't combine well, microwave for 30 seconds.
- 4. Stir again and pour over chicken legs.
- 5. Put in preheated oven. Bake 45 minutes.
- 6. Take out of oven and turn over and return to the oven .
- 7. Raise the temperature to 425 and bake until the sauce is bubbly and starts to caramelized on the chicken legs.(about 15 minutes.
- 8. Remove from oven and let rest 15 minutes before serving.
CARAMELIZED CHICKEN DRUMSTICKS
I developed this recipe and it is easy and kid friendly -- Grown-ups like it too. I strongly suggest to use drumsticks, or boned thighs, not the boneless breast. I also remove skin from the drumsticks to reduce the fat intake. Don't skip on fresh ginger and garlic. You can double or tripe the recipe and adjust amount of soy sauce & sugar for your preference.

- In a small bowl, combine soy sauce, sugar, water, ginger, garlic, sesame oil, and pepper.
- Place drumsticks on non-stick skillet and pour the soy sauce mixture on top. Cover with lid and bring to boil. Reduce the heat to low and cook for 15 min until they are cooked through.
- Remove the cover, turn up the heat to mid-high. The sauce will get thicken and start to caramelize in a few minutes. Continue to cook drumsticks turning them around so the sauce can cover them evenly, about 5 more minutes.
- When you see the sauce becomes like dark brown glaze and stick on to the meat, it is done.
- Remove from the heat, sprinkle sesame seeds all over them.
- Serve with hot rice and my steamed broccoli (recipe #286792).
