CARIBBEAN SWEET POTATO & BEAN STEW

I got this recipe from the Easy Home Cooking magazine. I like trying new and different things so I made this. The only thing I did differently when I made it was I added about four chicken tenderloins about 2oz each cut up into chunks. Also, I cooked this in about 1 1/2 hours in a pot rather than in the slow cooker as the redipe requests.

Caribbean Sweet Potato & Bean Stew image

Steps:

  • If cooking in the slow cooker- combine all ingredients, except for almonds, in the slow cooker. Cover; cook on low for 5 to 6 hours or high 2-3 hours until vegetables are tender.
  • Then adjust seasonings and serve with almonds and hot pepper sauce if desired.
  • To toast almonds spread in a single layer on a baking sheet and toast at 350 degrees for 8-10 minutes.
  • To cook on the stove, if you add any meats, cook those first, then add all ingredients to a large pot, bring up to a boil, then reduce heat and cover, simmer for 1-2 hours or until vegetables are tender.
  • Use same directions for seasonings and hot sauce, but you can also toast your almonds in the microwave for 20-30 seconds in a bowl.

2 cups frozen cut green beans
1 (15 ounce) can black beans, rinsed and drained
1 (14 ounce) can vegetable broth
1 small onion, sliced
2 teaspoons jamaican jerk spice
1/2 teaspoon dried thyme
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
1/4 cup slivered almonds (best if toasted)
hot pepper sauce (optional)

Steps:

  • Combine sweet potatoes,beans,broth,onions,jerk seasoning,,thyme salt and cinnamon .
  • Cover and cook on LOW HEAT about 5 hours,until veggies are tender.
  • Adjust seasonings;SPRINKLE WITH ALMONDS[toasted] TOAST ALMONDS:spread in a single layer in a heavy-bottomed skillet,cook over medium heat 1-2 minutes,stirring FREQUENTLY ,until the nuts are lightly browned.REMOVE FROM SKILLET IMMEDIATELY.COOL before using.
  • Serve with hot sauce if desired

Jerk sweet potato & black bean curry image

Steps:

  • Gently soften the diced onion in the sunflower oil in a big pan or casserole.
  • Meanwhile, whizz together the roughly chopped onion, ginger, coriander stalks and jerk seasoning with a hand-held blender. Add to the softened onion and fry until fragrant. Stir in the thyme, chopped tomatoes, vinegar, sugar and stock cubes with 600ml water and bring to a simmer. Simmer for 10 mins, then drop in the sweet potatoes and simmer for 10 mins more. Stir in the beans, peppers and some seasoning, and simmer for another 5 mins until the potatoes are almost tender. Cool and chill for up to 2 days.
  • To serve, gently heat through on the hob. Roughly chop most of the coriander leaves and stir in, then serve scattered with the remaining leaves.

  • Pour in the chopped tomatoes, vegetable stock and BBQ sauce, mix well, and cover with a lid. Leave to simmer gently for 10 minutes.
  • Add the chopped cabbage and the two tins of beans, as well as the coconut milk. Cover again, and simmer for a further 10 minutes.
  • When the sweet potato is fully cooked and everything is piping hot, season to taste, and serve with brown rice.
