GRILLED CABBAGE

Steps:
- Cut cabbage into 8 wedges; place on a double thickness of heavy-duty foil (about 24x12 in.). Spread cut sides with butter. Sprinkle with onion, garlic salt and pepper. , Fold foil around cabbage and seal tightly. Grill, covered, over medium heat until tender, about 20 minutes. Open foil carefully to allow steam to escape.

CHARRED HISPI CABBAGE WITH HAZELNUT CHILLI BUTTER

- Heat the oven to 200C/180C fan/gas 6 or heat a barbecue until the flames die down and the coals turn glowing white. Remove any bruised leaves from the cabbage and cut into four to six wedges, keeping the core intact so the leaves stay together. Drizzle 1 tbsp of the oil over the wedges and massage into the leaves. Sprinkle over a pinch of sea salt.
- If you're not using the barbecue, heat a heavy frying pan until hot, but not smoking. Sear the wedges, cut-side down, for 6-8 mins until blackened and charred, then turn over and cook on the other side for another 6-8 mins until they get a really good dark brown crust. Transfer to a baking tray, cut-side up, and roast for 10-15 mins until the stalks are tender when pierced with a knife, or transfer to a cooler place on the barbecue and cook until the stalks are tender.
- Meanwhile, heat the remaining oil in the pan, or in a small frying pan. Fry the chilli and hazelnuts for 2-3 mins until the hazelnuts smell nutty and the chilli softens. Add the butter, and stir for a few mins to coat. Stir in the parsley with some seasoning, then pour over the cabbage wedges on a serving plate.

- Remove all the tough outer leaves from the cabbage. Cut the cabbage into four, remove the stalk and then cut each quarter into fine shreds, working across the grain. Put 2 or 3 tablespoons of water into a wide saucepan, together with the butter and a pinch of salt. Bring to a boil, add the cabbage and toss over a high heat, then cover the saucepan and cook for a few minutes. Toss again and add some salt, freshly ground pepper and the knob of butter. Serve immediately.
GRILLED CABBAGE WEDGES
Cabbage wedges with chargrilled marks can be used as a side dish or incorporated into other dishes. I use this along my grilled teriyaki chicken kabobs, serving it all over basmati rice. The semi-carbon taste of the chargrilled marks enhance the flavor. Don't be afraid of a little brown/black color of charring it. It's good! Trust me.

- Preheat an outdoor grill for medium heat and lightly oil the grate.
- Cut cabbage into 8 wedges. Place a metal skewer through each wedge to hold in place and keep from falling apart. Drizzle both sides with olive oil and sprinkle with seasoned salt and pepper.
- Place directly on the grill and cook until grill marks are achieved, turning once, 8 to 12 minutes total. Remove from skewers and serve.

- Heat 3 tablespoons butter in a large pot over medium-low heat until mostly melted. Add cabbage. Place remaining 1 tablespoon butter on top of the cabbage. CHARGRILLED BUTTER CABBAGE

Steps:
- Cut the cabbage into wedges, keeping the stalk intact so the leaves stay together during cooking. Put in a bowl of water - you want the cabbage to be immersed so some water gets trapped between the leaves, which will help cook it.
- Lay the cabbage wedges on the grill furthest away from the coals and cook for 20 mins (or see tip below for cooking indoors). Melt the butter in a small pan over a low heat. Remove from the heat, then stir in the oil, garlic, chilli, lime zest and juice, the white pepper and a pinch of salt.
- After 20 mins, brush the spiced butter mixture over one side of each cabbage wedge. Close the lid for another 15 mins. Turn the cabbage wedges over and brush the other side with the spiced butter. Once the cabbage has started to soften, move it directly over the coals using tongs, brushing it with more of the spiced butter until it is fully soft and has char marks. Remove from the barbecue and serve straightaway.
