Penne with Shrimp and Herbed Cream Sauce image

Steps:

  • Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes. Drain the pasta and set aside.
  • In a large skillet, heat the oil over medium-high heat. Add the shrimp, garlic, 1/2 teaspoon of salt, and 1/2 teaspoon of pepper. Cook, stirring frequently until the shrimp turn pink and are cooked through, about 3 minutes. Using a slotted spoon, remove the shrimp from the pan and set aside.
  • Add the tomatoes, 1/4 cup basil, 1/4 cup parsley, and the red pepper flakes. Cook for 2 minutes, stirring constantly. Add the wine, clam juice, and heavy cream. Bring the mixture to a boil. Reduce the heat to medium-low and simmer for 7 to 8 minutes until the sauce thickens. Add 1/4 cup of the Parmesan, the cooked shrimp, the cooked pasta, and the remaining herbs. Toss together until all ingredients are coated. Season, to taste, with salt and pepper.
  • Transfer the pasta to a large serving bowl. Sprinkle with the remaining cheese and serve immediately.

1 pound penne pasta
1/4 cup olive oil
1 pound medium shrimp, peeled, and deveined
4 cloves garlic, minced
1/2 teaspoon kosher salt, plus extra for seasoning
1/2 teaspoon freshly ground black pepper, plus extra for seasoning

CHRISTMAS PASTA

We eat fish on Christmas Eve - no meat allowed. After Midnight Mass, all bets are off! We make this sauce for Christmas Day; you can't fit another meat in the pot! As many times as you reheat it, it just gets that much better, so if people are coming and going throughout the day, cook off only as much pasta as you need at the time - half a pound for every three people.

Christmas Pasta image

Steps:

  • Heat a deep pot over medium high heat. Add oil, garlic, bay, and pancetta bits and brown for 1 minute. Add meats and brown and crumble them for 5 minutes.
  • Chop carrot, celery, and onions near the stove and add to the pot as you work. Cook vegetables with meat 5 minutes and add wine. Cook for 1 minute; add stock and tomatoes to the pot.
  • Stir in parsley, allspice, or cinnamon and season sauce with salt and pepper, to taste. Bring sauce to a boil, reduce heat to medium low, and cook 10 to 15 minutes minimum before serving. Reheated sauce only improves.
  • Toss pasta (cook off only as much pasta as you need at the time: half a pound for every 3 people) with a couple of ladles of sauce to coat, then top bowl with extra sauce. Top pasta with lots of cheese and pass bread at the table.

2 tablespoons extra-virgin olive oil
4 cloves garlic, crushed
1 bay leaf, fresh or dried
1/4 pound pancetta, thick cut, chopped into small bits (Italian cured pork, ask at deli counter)
1/2 pound bulk hot Italian sausage
1 pound combined ground beef, pork and veal
1 medium carrot, peeled and finely chopped
1 rib celery, chopped
1 medium onion, chopped
1 cup good quality dry red wine
1 cup prepared beef stock, paper container or canned
2 (32-ounce) cans chunky style crushed tomatoes
A handful chopped flat leaf parsley leaves
1/4 teaspoon (a couple of pinches) allspice or cinnamon
Coarse salt and black pepper
2 pounds penne rigate, cooked to al dente
Grated Pecorino Romano, as an accompaniment
Fresh, crusty bread, for mopping

PASTA WITH FRESH HERBS, LEMON AND PEAS

Buy a bunch of parsley along with basil or chives to keep on hand in your refrigerator. The herbs will keep for a week if properly stored. Produce departments often use misters, but greens don't keep well once wet. When you get home, spin the herbs in salad spinner if they're wet, wrap them in a paper towel and then bag them.

Steps:

  • Bring a large pot of water to a boil. Meanwhile, in a large bowl or pasta bowl, combine the herbs, lemon zest, garlic, lemon juice and olive oil.
  • When the water comes to a boil, salt generously and add the pasta. A few minutes before the pasta is done, add the peas to the water. When the pasta is just about al dente, remove a half cup of the cooking water and add to the bowl with the herbs. Drain the pasta and peas, toss with the herb mixture and the cheese, and serve.

Here's a delicious new pasta I recently came up with which was well enjoyed by everyone at home. The flavour of the herbs makes this a perfect side dish or snack. We just loved it for its simplicity and delicate taste. No over-powering and no excess of anything. Just perfect as it should be.

Charishma's Penne Pasta With a Dash of Herbs...a Herbal Twist! image

Steps:

  • Soak the penne pasta in plenty of water in a large and flat bottomed dish.
  • In the meantime, prepare the masala mixture for the pasta.
  • To do so, take a wide bottom pan or skillet.
  • Heat 2 tablespoons of oil in it.
  • Once the oil is hot, add the garlic cloves (finely chopped) and the sliced onions.
  • Mix well and cook on low-medium heat for 7-10 minutes or until the onions turn translucent.
  • In the meantime once the pasta has been soaked for around 10-15 minutes, drain out all the water and replenish with about 10 cups of fresh water. All the pasta should be soaked in the water, so if you put more water then that is fine.
  • Add 2 tbsps of oil and 3 dashes of salt to the pasta.
  • Now, to the masala mixture, please add the herbs, that is, the oregano, rosemary, fresh basil leaves and the pizza seasoning.alongwith salt to taste. Mix well.
  • Allow the pasta to cook on medium flame for about 10 minutes, stirring about every 5 minutes, till the pasta is cooked completely (It should be soft in the middle and this is called al dente). Drain out the water completely. Rinse the cooked pasta under running tap water (preferably cold temperature).
  • Fold in the tomatoes(finely chopped) and mix thoroughly.
  • Stir in about 1 cup of water. Allow to cook on low flame until all of the mixture becomes like one combined well cooked mixture in appearance.
  • Add the drained pasta to the masala mixture and mix thoroughly from bottom to top, ensuring that all the pasta is well coated with the masala mixture.
  • Serve hot and relish it to the last bite!

500 g penne pasta
8 -10 cups water, to soak the pasta and then boil it
3 dashes salt
1 1/2 teaspoons rosemary
3 fresh basil leaves, washed and torn
1 1/2 teaspoons pizza seasoning
2 teaspoons oregano
2 -3 medium onions, washed, peeled and sliced
2 tomatoes, washed, peeled and finely chopped
4 -5 garlic cloves, washed and finely chopped
2 -3 tablespoons extra virgin olive pomace oil
