Steps:

  • In a large bowl combine all the ingredients.
  • Stir until well blended.
  • Refrigerate overnight, covered to allow the flavors to blend.
  • Serve with crackers or toast bits.

4 cups grated sharp cheddar cheese
1 medium sweet onion, finely chopped
2 cloves garlic, minced
6 jalapeno peppers, chopped
1 cup mayonnaise
1/2 cup chopped green onion
salt

JALAPENO POPPER SPREAD

This will definitely be the biggest hit at the party! This is such an easy appetizer to make and it tastes just like the jalapeno poppers you wish you could make yourself! The hardest part of this recipe is not eating it all by yourself! Serve with sliced sourdough baguettes, tortilla chips or crackers.

Steps:

  • Stir together cream cheese and mayonnaise in a large bowl until smooth. Stir in green chiles and jalapeno peppers. Pour mixture into a microwave safe serving dish, and sprinkle with Parmesan cheese.

Steps:

  • 1. In a food processor place cream cheese and garlic paste and pulse until two are combined
  • 2. take the seeds and stems out of the jalapenos and place them in food processor.
  • 3. Pulse mixture until all ingredients are combined.
  • 4. This mixture maybe be stored in the refrigerator for up to 2 weeks. You can use this as a cold spread for sandwiches or bagels or you can use it as a hot sauce for Mexican dishes or just on top of some chicken.

Steps:

  • Preheat the broiler.
  • Toss the Monterey jack and Cheddar cheeses together in a small bowl.
  • Heat the oil in a medium cast-iron or ovenproof skillet over medium-high heat. Add the scallions, jalapeno and a pinch of salt and cook, stirring, until tender, about 3 minutes. Add the tomato and cook, stirring, until soft, about 1 minute. Add the beer and cook until all the liquid has evaporated, about 7 minutes. Remove the skillet from the heat. Add the cheese mixture to the skillet and stir once or twice to combine.
  • Put the skillet under the broiler and broil until the cheese is melted, bubbling and lightly browned on top, 2 to 3 minutes. Serve hot with warm tortillas or tortilla chips.

12 ounces Monterey jack cheese, grated (about 3 1/2 cups)
4 ounces sharp white Cheddar, grated (about 1 1/2 cups)

Steps:

  • Preheat oven to 400°. Cut jalapenos in half lengthwise; remove seeds and membranes. In a large saucepan, boil peppers in water for 5-10 minutes (the longer you boil the peppers, the milder they become). Drain and rinse in cold water; set aside., In a small bowl, beat the cream cheese, cheddar cheese and Worcestershire sauce until smooth. Spoon 2 teaspoonfuls into each jalapeno; sprinkle with bacon.
