We serve this with ham on Easter Sunday. I often double this recipe. Especially when we have company over. Enjoy!

Steps:

  • Beat egg and sugar in a saucepan over medium heat.
  • Mix vinegar and mustard in a small bowl; slowly stir into the egg mixture.
  • Cook and stir the mixture until hot.

  • Combine the butter, mustard, garlic, anchovy paste, Worcestershire sauce, salt, and pepper in a bowl. Mix until garlic and anchovy paste are evenly distributed throughout the butter. Serve immediately over warm food or cover and chill until needed.

  • Place the vinegar, wine and chopped shallot in a small saucepan and cook over medium heat until reduced to a syrup.
  • Stir in the cream and cook until reduced a little more.
  • Add in the diced butter, whisking until amalgamated. Season with salt and freshly ground white pepper, mix in the mustard, pass through a fine sieve and serve at once.

Pasta with Scallops and Lemon Butter Mustard Sauce image

Steps:

  • Simmer wine and lemon zest in medium saucepan.
  • Add scallops and cook and stir for 1 minute.
  • Take out scallops, raise heat and reduce wine to about 1/4 cup.
  • Reduce heat to low, whisk in mustard, then butter, in small pieces.
  • Add scallops and any juice and heat through.
  • Season with salt and pepper.
  • Put sauce over cooked pasta-angel hair is good, and sprinkle on chives.
