CHEESE-FILLED GARLIC ROLLS

To change up plain old dinner rolls, I added mozzarella. Now my family wants them at every gathering. I don't mind, even in a time crunch. -Rosalie Fittery, Philadelphia, Pennsylvania

Cheese-Filled Garlic Rolls image

Steps:

  • Divide dough into 24 portions. Shape each portion around a cheese cube to cover completely; pinch to seal. Place each roll in a greased muffin cup, seam side down. Cover with kitchen towels; let rise in a warm place until doubled, about 30 minutes. Preheat oven to 350°., In a small bowl, mix butter, parsley, garlic, Italian seasoning and pepper flakes. Brush over rolls; sprinkle with cheese. Bake until golden brown, 15-18 minutes., Cool 5 minutes before removing from pans. Serve warm.

1 loaf (1 pound) frozen bread dough, thawed
24 cubes part-skim mozzarella cheese (3/4 inch each, about 10 ounces)
3 tablespoons butter, melted
2 teaspoons minced fresh parsley
1 garlic clove, minced
1/2 teaspoon Italian seasoning
1/2 teaspoon crushed red pepper flakes
2 tablespoons grated Parmigiano-Reggiano cheese

Cheese Stuffed Rolls image

Steps:

  • Cut the tops off of the rolls and hollow them out leaving a thin shell.
  • Grind all of the ingredients and bread in a meat grinder or food processor and stuff back into the rolls.
  • Place the tops back on the rolls and secure with tooth picks.
  • Bake on an ungreased cookie sheet at 350 degrees F. for about 45 minutes.
  • Serve Hot.

16 ounces cheddar cheese, sharp, shredded
8 ounces green olives, stuffed
2 medium green bell peppers
12 large French rolls
6 ounces tomato sauce
1 medium onion

Steps:

  • Preheat oven to 375 Spread 1/2 cup sauce in bottom of baking dish.
  • In large bowl, thoroughly combine egg, seasonings, ricotta cheese, parm cheese, 1/2 cup mozz cheese and 1/2 can onions.
  • Spoon equal amounts of cheese mixture on 1 end of each beef slices. Roll up beef slices jelly roll style and arrange. seam side down, in baking dish.
  • Pour remaining sauce over beef rolls. Bake for 40 minutes or until heated through. Top beef rolls with remaining mozz and onions. Bake uncovered, 3 minutes longer.
