HAM AND CHEESE WAFFLES WITH AN EGG
Cracking eggs onto a well-greased waffle iron will give you perfectly-cooked, intact sunny-side up eggs, complete with crispy, lacy edges. Break the yolks for a gooey sauce topping to these Gruyere-and-ham-laced waffles.

- Preheat a waffle iron to medium-high. Preheat the oven to 200 degrees F. Whisk together the flour, Gruyere, ham, Parmesan, baking powder, sugar, 1/4 teaspoon salt and a few grinds of pepper in a large bowl. Whisk together the milk, butter, oil, 1 egg and the scallions in another bowl. Pour the milk mixture into the flour mixture and gently stir until just incorporated (it's okay if there are some lumps).
- Lightly brush the top and bottom of the waffle iron with butter. Fill the waffle iron about three-quarters of the way full (some waffle iron should still be showing). Close the lid gently and cook until the waffles are golden brown and crisp, 6 to 7 minutes. Keep the cooked waffles warm in the oven or covered with foil on a plate while you make the remaining waffles.
- Lightly brush the waffle iron bottom with more butter. Crack the remaining 4 eggs right onto the waffle iron and keep the iron open (do this in batches if your iron isn't large enough). Sprinkle the eggs with salt and pepper. Cook until the whites are set and the yolk is still runny, 4 to 5 minutes. Serve 1 egg on each waffle, using a spatula to transfer.

- Fold the ham, cheese and pepper into the prepared waffle batter in a large bowl.
- Preheat a waffle iron and coat with cooking spray. Pour some batter into the waffle iron, spreading it into the corners. Close the lid and leave it closed until the waffles are cooked through and golden brown in spots, 6 to 8 minutes. Continue until all the batter has been used.
- Cut the waffles into sticks, transfer to plates and serve with maple syrup.

- Heat butter over low heat in a 2 quart saucepan until melted. Stir in 1/4 cup baking mix and the pepper. Cook over low heat, stirring constantly, until mixture is smooth and bubbly. Remove from heat and stir in 2 cups milk. Heat to boiling, stirring constantly. Boil and stir 1 minute.
- Stir in ham and parseley, heat through. Keep warm over low heat.
- Beat 2 cups baking mix, 1 1/3 cup cups milk, the oil and egg with wire whisk until well blended. Fold in the cheese. Pour 1 cup batter onto center of hot waffle iron.
- Bake until steaming slows. Remove waffle carefully. Serve with hot ham sauce over waffles.
