BAKED CHEDDAR EGGS & POTATOES

- Preheat oven to 400°. In a 10-in. cast-iron or other ovenproof skillet, heat butter over medium-high heat. Add potatoes; cook and stir until golden brown and tender. Stir in parsley, garlic, salt and pepper. With the back of a spoon, make 4 wells in the potato mixture; break 2 eggs into each well., Bake until egg whites are completely set and yolks begin to thicken but are not hard, 9-11 minutes. Sprinkle with cheese; bake until cheese is melted, about 1 minute.

CRISPY POTATOES WITH CHEESY EGGS

- Put a medium nonstick skillet over medium heat and add 1 tablespoon of the butter and the oil. Peel and grate the potatoes on the large holes of a box grater or in a food processor. Sprinkle the potatoes well with salt and pepper and toss to coat. When the skillet is hot, add the potatoes, pressing them down and flattening them out to evenly cover the bottom of the skillet. Cook until the potatoes are well browned on the bottom, monitoring the heat as you go so they don't burn. Carefully flip over the pancake, keeping it in one piece, and brown it on the other side. Remove to a paper-towel-lined plate and keep warm.
- While the potatoes are cooking, put a small skillet over medium heat and add 2 tablespoons of the butter. When the butter has melted, add the shallot and cook until it softens. Sprinkle over the flour and cook for a minute or 2. Pour in the cream and bring to a boil. Add the whiskey and bring to a boil. Reduce the heat and simmer for a few minutes until it thickens a bit. Turn off the heat and add half the cheese. Stir to melt the cheese. Taste and adjust the seasoning with salt and pepper. Cover and keep warm.
- In another medium skillet over medium-low heat, add the remaining tablespoon butter. Whisk the eggs well, and sprinkle them with salt and pepper. Pour the eggs into the pan, add the remaining cheese and reduce the heat to low. Cook slowly until the cheese is melted and the eggs are cooked through but soft.
- Place the potato pancake on a serving plate. Top with the cheesy eggs and pour on the sauce. Dollop on the caviar and sprinkle over the chives. Cut into 4 slices and serve.

- Cook potatoes in boiling water 5 min.
- Meanwhile, cook and stir bacon in large nonstick skillet on medium-high heat until crisp. Remove from skillet; drain on paper towels. Carefully wipe skillet with additional paper towel.
- Drain potatoes. Add onions and peppers to skillet; cook and stir on medium heat 3 min. Add potatoes; cook 10 min., stirring occasionally.
- Make 6 small wells in potato mixture. Slip 1 cracked egg into each well; top with bacon and cheese. Cover; cook 5 to 8 min. or until egg whites are set and yolks are cooked to desired doneness. Sprinkle with cilantro; serve with salsa.

CHEESY SCRAMBLED EGG AND POTATO SKILLET
This makes a great weekend brunch or a light weekday dinner served with a side salad and crusty bread. You will need a large skillet for this, an electric frypan works well also. If possible use the large size hash browns for this, red potatoes, peeled and cut into 3/4-inch cubes can be used in place of hash browns.

- In a large skillet cook the bacon pieces over medium heat for about 4-5 minutes.
- Add in hash browns and continue cooking stirring until potatoes are browned and crisp (about 12-15 minutes).
- Add in onions, bell pepper and jalapeno (if using) continue to cook until veggies are tender (about 3-4 minutes).
- Season with seasoned salt and black pepper to taste.
- Skim some of the fat off if desired.
- In a bowl whisk together the eggs with whipping cream until well combined; pour over the veggies/potato mixture in the skillet, then stir with a wooden spoon or spatula to combine.
- Cook over medium heat gently lifting portions with spatula so uncooked portion flows underneath or until the eggs are just set (about 4-5 minutes).
- Sprinkle with grated cheddar cheese, then let stand for 2-3 minutes until melted.
- Sprinkle with chopped green onions.
- Delicious!

ELECTRIC SKILLET CHEESY POTATOES
I rarely crank up the oven in the hot months, but find myself wanting things that are normally cooked in the oven. These are a delicious way to make potatoes and avoid heating up your kitchen.

- 1. If leaving skin on be sure to wash and dry your potatoes. If not remove skin. Slice very thinly, I like to use the thinnest slice on my mandolin.
- 2. Spray bottom of elec. skillet with non stick spray. Place one layer of potatoes slightly overlapping, then season with your favorite potato seasonings, then sprinkle some grated cheese on. There is no right or wrong amount of cheese, just use what you feel comfortable using. You can also sprinkle on some Parmesan as well if desired.
- 3. Repeat with layer of potatoes, seasoning and cheese. If you don't have enough potatoes, wash and cut more. You can make as much or as little as you like, cooking time may be longer for a full skillet.
- 4. Place lid on and turn skillet to the very lowest setting. On mine it is just above warm. I stand and watch for a minute to see if it cuts on and then off after a minute. You don't want to have the skillet stay on continuously, the potatoes on the bottom will burn. After about 30 min. insert a fork and see if they are fork tender, if not, cook a little while longer. Let cool for about 15 min with lid off before serving.
- 5. NOTE: You could add sliced or diced onions, herbs, or even cooked meat (bacon) to the layers. Also any other vegetable that would not take longer than the potatoes to cook.
- 6. Pico de gallo version: Add 1/2 c of pico to first layer of potatoes. After potatoes are done, garnish with the other 1/2 c.
