CHOCOLATE CHERRY TRUFFLES

My cherry truffles were the delicious result of a kitchen experiment involving a bottle of kirsch I'd received as a gift and some dried cherries I had on hand. They won a blue ribbon at the Wisconsin State Fair! -Gerry Cofta, Milwaukee, Wisconsin

Chocolate Cherry Truffles image

Steps:

  • In a small bowl, combine cherries and brandy; cover and let soak for 1 hour or until cherries are softened., Place dark chocolate in a small bowl. In a small saucepan, bring cream just to a boil. Pour over chocolate; whisk until smooth. Stir in extract and soaked cherries with liquid. Cool to room temperature, stirring occasionally. Refrigerate for 1 hour or until firm., Shape into 1-in. balls. Place on baking sheets; cover and refrigerate for at least 1 hour., In a microwave, melt milk chocolate; stir until smooth. Dip half of the balls into milk chocolate, allowing excess to drip off. Place on waxed paper; let stand until set., Melt dark chocolate; stir until smooth. Dip remaining balls into dark chocolate, allowing excess to drip off. Place on waxed paper; let stand until set. Drizzle with melted chocolate and decorate with pearl dust as desired. Store in an airtight container in the refrigerator.

Steps:

  • In a small saucepan, bring the cream, butter and sugar to a boil, stirring constantly. Remove from the heat; stir in chocolate until melted. Cover and refrigerate for at least 4 hours or until easy to handle. , Pat cherries with paper towels until very dry. Shape a teaspoonful of chocolate mixture around each cherry, forming a ball. Cover and refrigerate for 2-3 hours or until firm., In a microwave, melt chocolate and shortening; stir until smooth. Dip cherries until coated; allow excess to drip off. Place on waxed paper to set.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, stir together 1 1/4 cup flour and 1/3 cup brown sugar. Rub in 1/2 cup butter using your hands or a pastry blender. Press into an ungreased 9 inch square pan.
  • Bake for 15 minutes in the preheated oven, or until lightly browned at the edges. Set aside. In a medium bowl, beat eggs until light. Mix together the brown sugar, flour, baking powder, and salt; stir into the eggs. Mix in the coconut, nuts, and cherries; spread the batter evenly over the baked crust.
  • Return to the oven, and bake for 25 minutes, or until brown. Set aside to cool. In a small bowl, mix the confectioners' sugar, 2 tablespoons butter, vanilla, and water until smooth. Add more liquid if necessary to make a more spreadable mixture. Spread over cooled bars before cutting into squares.

Crowd-Pleaser Cherry Squares image

Steps:

  • FIRST LAYER: Crumble ingredients together well.
  • Press into ungreased 9 x 9 inch pan.
  • Bake in preheated 350F oven for 15 minutes.
  • SECOND LAYER: Beat eggs slightly; add remaining ingredients in the order listed.
  • If using maraschino cherries, drain well.
  • I prefer using candied cherries- at Christmas, I use a mixture of red& green.
  • Spread over first layer& return to oven for 25 minutes.
  • Let cool completely.
  • TOP LAYER: Beat ingredients in a small bowl, adding more water if necessary to make a more spreadable mixture.
  • This makes a minimum amount of icing to spread over top.

Steps:

  • Heat oven to 350°F. Cut cookie dough in half crosswise. Cut each section in half lengthwise. With floured fingers, press dough in bottom of ungreased 13 x 9-inch pan to form base. Bake at 350°F. for 12 to 16 minutes or until light golden brown. Remove from oven. Cool 45 minutes or until completely cooled.In medium microwave-safe bowl, combine chocolate chips and butter. Microwave on HIGH for 1 to 2 minutes or until melted and smooth, stirring every 30 seconds. Add cocoa, corn syrup and milk blend well. Add powdered sugar mix until smooth. Press over cooled base. Top with cherries gently press into filling.In small microwave-safe bowl, combine vanilla chips and shortening. Microwave on HIGH for 1 to 2 minutes or until melted and smooth, stirring every 30 seconds. Spoon and spread over filling. Refrigerate 20 minutes or until set. Cut into squares or diamond-shaped pieces.
