Moroccan Chicken and Squash image

Steps:

  • Combine the squash, turnip, leek and raisins in a 6-quart slow cooker. Season the chicken with salt and pepper and place on top of the vegetables.
  • Whisk the chicken broth, tomato paste, cumin, coriander, turmeric, lemon zest and juice, and 1 teaspoon salt in a large bowl. Pour the mixture over the chicken and vegetables. Cover and cook on high, 4 hours.
  • Serve the chicken and vegetables with couscous; drizzle with some of the cooking liquid. Top with cilantro.

8 ounces butternut squash, peeled and cut into large chunks (about 2 cups)
1 large turnip, peeled and cut into large chunks (about 2 cups)
1 leek (white and light green parts only), chopped
1/2 cup golden raisins
4 skin-on, bone-in chicken legs (3 to 4 pounds), drumsticks and thighs attached

MOROCCAN SPATCHCOCKED CHICKEN

Moroccan Spatchcocked Chicken image

Steps:

  • Heat oven to 400°F. Line 15 x 10 x 1-inch pan with foil.
  • Pat chicken dry with paper towels. Place chicken, breast side down, on cutting board. Using heavy-duty kitchen scissors or poultry shears, cut closely along one side of backbone from thigh end to neck. Repeat on other side. Remove backbone; save for making Chicken and Broth or Roasted Chicken and Broth or discard. Turn chicken over; flatten breast area by pressing firmly with heel of hand. Place chicken, breast side up, in pan. Tuck wings under breast.
  • In small bowl, mix cumin, salt and cinnamon; sprinkle evenly over chicken. Cover with foil; bake 50 minutes.
  • In small bowl, mix honey, oil and molasses until well blended. Brush mixture on chicken.
  • Bake uncovered 10 to 20 minutes, brushing once or twice with pan juices, or until thermometer inserted in thickest part of breast reads at least 165°F. Sprinkle chicken with pomegranate seeds and cilantro. Serve with pan juices, if desired.

Steps:

  • Preheat oven to 250°F.
  • Melt together Karo syrup, sugar and butter in a large saucepan. Bring to a boil.
  • Add butter flavoring and baking soda, mix.
  • Pour over cereal mixture (use whatever quantities of cereal and nuts that you desire to make 18 cups).
  • Spread on a large, flat cookie sheet and bake at 250°F for 25 minutes. Remove from oven and spread Chex mixture on waxed paper, separating cereal pieces. Let cool completely.
