- Shred the chicken. Spoon the roasted vegetables into a blender with any juices from the baking sheet and blend until smooth. Toss 1 cup of the sauce with the chicken. Squeeze the juice of 1 lime over it. Put the remaining sauce in a bowl to serve on the side.
- Serve with the warm tortillas, salsa, sour cream, crumbled cotija cheese, lime wedges and cilantro.
TEX-MEX CHICKEN STRIPS
I was looking for a way to amp up the flavor of regular chicken strips so I crushed up some leftover corn chips to create a crispy, flavorful coating. -Cynthia Gerken, Naples, Florida

CHICKEN MARINADE ONE (TEX MEX)
Found this in the Dallas Morning News a while back and wanted to be sure to keep. You can adjust according to the number of chicken breasts you want to marinate as long as you keep in mind the following: Fat, Acid, Seasoning. Prep time is a guess - some will take a little more chopping than others. (There are 8 of them but I had to post them separately as the "computer system" wouldn't let me do them all in one recipe.

BEST CHICKEN MARINADE
This is the best chicken marinade for grilling! For tender, juicy chicken with a beautiful caramel color, this easy recipe is a must-try. Don't marinate the chicken for more than 4 hours, or the lemon juice will affect the texture. This is my fiancé's favorite chicken.
