PISTACHIO CRUSTED CHICKEN
This recipe is so easy, and very elegant. Anyone can make it, and everyone will enjoy it!

Steps:
- Preheat oven to 500 degrees F (260 degrees C). Lightly coat a baking sheet with cooking spray.
- Mix together pistachios and bread crumbs in a shallow bowl. In a separate bowl, stir together Dijon mustard, olive oil, honey, salt and pepper until smooth. Dip chicken into Dijon mixture to coat, then coat with bread crumbs. Place onto prepared baking sheet.
- Place into preheated oven and turn the oven down to 375 degrees F (190 degrees C). Bake until the chicken is no longer pink and the pistachio coating is golden brown, about 20 minutes.

CHICKEN PINOCCHIO
One of the chefs in a local Italian Ristorante developed this recipe for his customers and it is "died and gone to heaven" delicious. It can easily be doubled for more than two. It has all my favorite foods in it and can be served with a green salad and choice wine to make you and your guests want it again and again!

Steps:
- Dust chicken breast(s) in flour, then dip in egg, followed by a coating of breadcrumbs.
- Pan fry lightly on medium/high heat with olive oil and butter for 2-3 minutes per side until golden brown.
- Stir in garlic, shallots, brandy, spinach, mushrooms, heavy cream, salt and pepper; simmer to reduce for 5 minutes.
- Add gorgonzola, then turn off heat.
- Place chicken breast(s) in heat-resistant dish and pour sauce over the chicken.
- Top with fontina or mozzarella and bake at 350 degrees for 6-8 minutes, or until cheese is melted and golden.
- Serve with steamed asparagus.

- Cut chicken thighs into 1-inch dice. Combine chicken, olive oil, adobo, salt, sazón, oregano, white vinegar, and crumbled bay leaves in a large resealable bag. Seal the bag and mix the chicken until well combined. Refrigerate for 1 hour or overnight.
- Soak bamboo skewers in water for 30 minutes. Thread chicken on to skewers making sure not to pack the chicken too tightly. Brush the skewers lightly with barbecue sauce.
- Heat grill to on high to 500 degrees. Lightly oil the grill grate to help the skewers from sticking. Place the skewers on the grill and sear on each side for 3 minutes. Brush the chicken skewers again with barbecue on both sides. Lower the heat to medium, about 400 degrees, and grill for 4 minutes. Serve.

- Place the bamboo skewers in a dish of warm water to soak until you are ready to use them. Make sure the skewers are completely submerged in the water.
- Combine chicken cubes, 2 tablespoons Mazola® Corn Oil, sazón, adobo, oregano, garlic powder, and cumin in a large container until the seasoning is well blended and the chicken pieces are completely coated. Cover and refrigerate for 1 hour.
- Remove the marinated chicken from the refrigerator. Remove the skewers from the water and place on paper towels to dry slightly. Slide chicken onto the skewers, leaving space on each end, until you have used all the chicken.
- Heat a grill to medium heat, then add the chicken to the grill in a single layer. Grill the chicken for 5 minutes, then brush with barbecue sauce before flipping the chicken over and brushing barbecue sauce on the other side. Cook for 5 more minutes, then check chicken for doneness. Brush more barbecue sauce onto the chicken and cook for a few more minutes, or until chicken has reached an internal temperature of 165° F.
