CHIDIS' IGBO STEW
I actually just made this recipe on Sunday the 15th--with my husband's help since he is from Nigeria and this is a favorite among his family. You can use any kind of meat combinations you prefer. I used stew meat and chicken thighs.

Steps:
- Use a stew pot and boil enough water to cover all the meat, onions, vegetable oil and salt.
- Boil until tender/almost done.
- Meanwhile, puree together tomatoes, garlic, tomatoes paste, jalapeno, red pepper, and fresh herbs.
- When meat is ready, drain off all but about 1 1/2 cups of broth.
- Add in the puree mix; cover and stew for about an hour. Approximately 15 minutes before done add in fresh cut spinach.
- Serve with your choice of rice.

SKILLET QUESO CHICKEN
I actually just drummed up this recipe about 6 years ago and it has been a hit with my stepchildren and husband since.

Steps:
- Cook chicken breast fully. Chop chicken in fine bites. Add onion and rotel tomatoes (drained) and simmer for 15 minutes.
- While chicken is simmering, heat vegitable oil in seperate pan at very high temperature. Place flour tortilla in pan and cook one at a time. Brown both sides and remove to a side plate. I always place a paper towel on the plate to absorb excess oil and seperate each flour tortilla the same thereafter.
- After all is cooked, place tortillas on separate plates and top with queso chicken. They eat it like a pizza. My toddler likes her tortillas shredded and queso chicken applied all over in a bowl. Easier to eat for the little ones.

MINNIE'S CHOCOLATE PIE FROM THE HELP
I saw the movie, The Help, this weekend and it was excellent. Then the sermon on Sunday included a reference to it. I wanted to have the recipe for Minnie's pie - NOT the one she made ONLY for Hilly!!!!!. Maybe someone else wants it, so here it is.

Steps:
- Preheat oven to 325°F.
- Mix everything together in one big bowl.
- You don't have to bake the crust first, prick the bottom of it.
- Pour filling into crust.
- Bake for about 50 minutes. Let the pie set for a long while once it comes out of the oven. I think this definitely tastes better room temperature.
- If you'd like, serve with a big scoop of ice-cream, some fruit, a little whipped cream, or straight out of the pie plate!
