Almonds are a wholesome snack and adding chocolate can also satisfy a chocolate craving.

Simple Chocolate-Covered Almonds image

Steps:

  • Set a pot of water over medium heat and bring to a boil. Add a double boiler to the top of the pot and lower heat to a simmer.
  • Add chocolate and coconut oil to the double boiler. Stir until chocolate is melted.
  • Place a drip rack over a parchment-lined pan. Place almonds on top of the drip rack. Pour chocolate over the almonds. Allow chocolate to dry.
  • Once dry, store almonds in a resealable container.

Chocolate Almond Bark image

Steps:

  • Butter a baking sheet or use a silicone baking mat (preferred).
  • Bring about 1 inch of water to a simmer in a medium saucepan with a bowl fitted to sit just above the simmering water. Add the chocolate. When the chocolate is melted, remove the bowl from the heat and stir in the almonds. Spread on the baking sheet in a thin uniform layer. Let set for 5 minutes, then sprinkle with the salt. Chill in the refrigerator until firm, at least 2 hours.
  • Break the bark into 1- to 2-inch pieces. Store in a cool, dry place, stacked between layers of foil or parchment in an airtight container. The bark will keep, tightly sealed in your pantry, for up to a week.

Steps:

  • Roughly chop the dates and add into a blender along with the boiling water. Cover and set aside to soak for 20 minutes.
  • Preheat your oven to 300 degrees F (150 degrees C) and lightly grease a large, rimmed baking sheet with cooking spray.
  • Add the almond butter, cocoa powder, maple syrup to taste, oil, vanilla and salt to the blender and blitz until smooth (a few bits of dates is totally fine).
  • Stir the oats and almonds together in a large bowl and add the cocoa mixture. Mix very well until evenly combined, then transfer to the prepared baking sheet. Spread the mixture into an even layer and bake until crisp and crumbly, stirring about halfway through, 50 minutes to 1 hour.
  • Cool the granola to room temperature, then break any large chunks up and transfer to a resealable container and store at room temperature for up to 1 month. Serve with milk, on yogurt or enjoy out of hand.

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in almonds and vanilla. In another bowl, whisk flour, cocoa and salt; gradually beat into creamed mixture. Refrigerate, covered, 2 hours or until firm enough to shape., Preheat oven to 350°. Shape 2 teaspoons of dough into 2-in.-long logs; form each log into a crescent. Place 2 in. apart on ungreased baking sheets. Bake 10-12 minutes or until set. Remove from pans to wire racks to cool completely., Dip cookies halfway into melted chocolate, allowing excess to drip off. Place on waxed paper. If desired, sprinkle with coconut. Let stand until set. Cover dipped ends of cookies with waxed paper; dust undipped ends with confectioners' sugar. Store between pieces of waxed paper in airtight containers.

Steps:

  • Spray counter lightly with non-stick cooking spray. Combine 6 dinner rolls or 4 Texas rolls together and roll into a 10-inch circle. Repeat with remaining rolls to make another circle. Cover both circles with plastic wrap and let rest. In a blender, combine almond paste and egg whites and pulse on lowest setting to remove clumps. Pour into a bowl. Add powdered sugar gradually, stirring between each addition, until mixture is thick. Remove wrap from dough circles. On one, spread the almond mixture, leaving about 3-inches around the edges free of filling. Work quickly as almond filling has a tendency to spread. Top the filling with 1/2 cup almonds and 1/2 cup chocolate chips. Brush the edges with beaten egg. Lay second circle of dough on top. Press edges together tightly to seal. Brush top of second circle with beaten egg and sprinkle with remaining almonds and chocolate chips. Cover with sprayed plastic wrap and let rise 30 minutes. Remove wrap and bake at 350°F for 20-25 minutes. Cool and cut into wedges to serve.

Steps:

  • Heat oven to 350 degrees. Toast almonds for 15 minutes on a baking sheet. Line two baking pans with parchment paper; set aside.
  • In a medium saucepan, combine granulated sugar, 1/4 cup water, toasted almonds, and cinnamon. Cook, stirring constantly, until sugar becomes golden and granular and almonds are completely coated and separated. Pour nuts onto prepared pans. Chill in freezer, about 15 minutes.
  • Meanwhile, place chocolate in a medium bowl; place bowl over simmering water until melted. Transfer half the chilled almonds to a large bowl, and pour half the melted chocolate over nuts. Stir until nuts are thoroughly coated. Transfer nuts onto prepared baking pan. Using two forks, separate nuts so none stick together. Return almonds to refrigerator until chocolate has set, about 20 minutes. Repeat with remaining almonds.
  • Place cocoa powder and confectioners' sugar into two separate bowls. Toss half the nuts in cocoa and half in sugar, and gently tap off any excess powder. Store separately in airtight containers for up to 1 month.
