- Mix cream cheese and 3 cups cookie crumbs until blended.
- Shape into 48 (1-inch) balls. Freeze 10 min. Dip balls in melted chocolate; place in single layer in shallow waxed paper-lined pan. Sprinkle with remaining cookie crumbs.
- Refrigerate 1 hour or until firm.

Steps:
- 1. Melt chocolate over hot not boiling water (double boiler pan). Cool.
- 2. Whip 1/2 cup whipping cream and fold into chocolate.
- 3. Chill until firm enough to shape.
- 4. Form in 1 inch balls. Roll in finely chopped nuts OR crushed crisp rice cereal. Store in refrigerator.
CHOCOLATE CHIP CREAM CHEESE DESSERT BALL - UNIQUE!
This is not your typical cheese ball -- it is a dessert cheese ball that is always a hit at parties. It tastes a lot like chocolate chip cookie dough. I serve it as an appetizer as well. Graham cracker sticks work really well with this recipe -- I use both regular and chocolate graham crackers. Prep time does not include 3 hours to chill. Enjoy! Viclynn

Steps:
- Beat the cream cheese, butter and vanilla in a mixing bowl.
- Gradually add the sugars, mixing just until combined.
- Stir in the chocolate chips.
- Cover in plastic wrap and shape into a ball. Chill for at least 3 hours.
- Just before serving, roll the cheese ball in the chopped pecans.
- Serve with graham crackers.

Got this from Country Cooks Magazine. It is just like hot chocolate from Paris. The better the quality of the chocolate chips- the better the hot chocolate!

Steps:
- Microwave chocolate, cream and salt in a large bowl, stirring occasionally until smooth- about 2 minutes.
- Refrigerate until firm- about 2 hours. Roll 3 TBS chilled chocolate mixture into ten 2 " balls. Individually wrap balls in saran wrap and transfer balls to a large Ziploc.
- Freeze.
- To make 1 cup of hot chocolate, combine 1 unwrapped chocolate ball and 1 cup whole or low fat milk in a large mug. Microwave, stirring occasionally until smooth and hot- about 2 minutes.
- You can also use vanilla soy milk if you like that.

CHOCOLATE COVERED ICE-CREAM BALLS
This recipe comes from my collection of 'tried' recipes from magazines. Even though they take a little patience to make I believe they are a worthwhile treat to have as an after-dinner party acccompaniment with coffee. Any favourite liqueur can be used - Grand Marnier or Cointreau for a rich orange flavour, or Kahlua or Tia Maria for a coffee flavour. I like Baileys Irish Cream or a rich chocolate liqueur myself!!!! The choice is yours. Freezing time is not included in cooking time.

Steps:
- Sprinkle gelatine over water in a small bowl.
- Place bowl over a container of hot water until the gelatine is dissolved, then cool.
- Beat ice-cream until creamy, add gelatine and liqueur and beat until just combined.
- Pour ice-cream mixture into a container and freeze for several hours or overnight until firm.
- Before making these ball put an oven tray into freezer to become very cold.
- Working very quickly using a melon baller scoop out balls of ice-cream and put on cold tray. It helps to dip the melon baller into cold water before rolling out each ball.
- Place tray with balls, back into the freezer and freeze until firm.
- Remove tray from feezer and push small wooden sticks (toothpicks) into each ball at a slight angle then replace tray in freezer.
- Once you get to this stage put chocolate and shortening in a bowl over simmering water to melt.
- Remove from heat and allow to cool slightly.
- Pour chocolate into a small drinking glass then dip each ball into mixture, coating each one well.
- Put chocolate covered balls on to a cold tray and return to freezer until firm.

- Heat oven to 350°F. Make and bake cake as directed on box for 13x9-inch pan. Cool completely, about 1 hour.

- Make the balls. Use a scoop or spoon to form 1-inch balls. Set the balls on your parchment-lined baking sheet.
- Chill. Place the baking sheet in the freezer and chill the Oreo balls for at least 20 minutes.
- Melt the chocolate. Follow the manufacturer’s instructions to melt the chocolate wafers. If you want to get a little colorful, you can substitute candy melts for the chocolate.
