RICH CHOCOLATE BROWNIES
I'm one of those people who need chocolate on a regular basis. I looked high and low for a rich brownie recipe that called for cocoa instead of chocolate squares...and this is it. - Preheat oven to 350°. In a large bowl, beat the sugar, eggs and vanilla. Beat in butter. Combine the flour, cocoa, baking powder and salt; gradually add to batter and mix well. , Pour into a greased 8-in. square baking dish. Bake until a toothpick inserted in the center comes out clean, 25-30 minutes. Cool on a wire rack. , For frosting, combine the cocoa and butter. Combine the water and coffee granules; add to cocoa mixture. Stir in sugar until smooth. Frost brownies.

CHOCOLATE SQUARES OF JOY (AKA BABY BROWNIES)
This is the "Baby Brownies" recipe from the "New Basics Cookbook". My sister takes them to every potluck and they disappear! A friend of ours named them "Squares of Joy" because they are far above the usual brownie!

- Preheat the oven to 350 degrees F.
- Butter and flour an 8 inch square baking pan.
- Melt the chocolate in a small heavy saucepan over low heat, stirring constantly. Add the syrup and stir well.
- Remove the pan from the heat and add the butter. Beat until the mixture is smooth.
- Stir in the vanilla and the eggs. Mix thoroughly.
- In a mixing bowl, sift together the sugar, salt, and flour. Add this to the chocolate mixture and blend thoroughly.
- Pour the batter into the prepared pan, and bake until just cooked--about 30 minutes.
- Allow the brownies to cool completely in the pan, then cut them into 1 inch squares and transfer to a serving plate.
- Note: 1 inch is the proper size for these brownies--they are extremely rich!

WORLD FAMOUS BROWNIES
This recipe is adapted from "Robert's Absolute Best Brownies" from Leite's Culinaria website.I have tried dozens of brownie recipes but this one is my all-time favorite. The addition of unsweetened chocolate makes these the deepest, richest, most decadent brownies ever!

Steps:
- Preheat the oven to 350°F.
- Line an 8-inch square pan with aluminum foil.
- Place bittersweet chocolate, unsweetened chocolate and butter in a large microwave-safe bowl. Microwave for 2-3 minutes, stirring every 30 seconds (don't skip this step or the chocolate will scorch!) until mixture is melted. Cool to lukewarm (don't skip this step either or the eggs will curdle!).
- Once mixture is cooled, stir in the sugar, pinch of salt, and vanilla until combined.
- Beat in the eggs by hand, one at a time.
- Add the flour and stir energetically for 3-5 minutes until the batter is thick, smooth, and 'dry'. It will look curdled at first and may have some separated liquid, but if you stir it thoroughly it will reach the correct consistency. (This step is the most important to ensure the brownies have the perfect consistency!).
- Scrape the batter into the prepared pan and bake until the center feels almost set (with a few dry crumbs when tested), about 20-30 minutes. Do not overbake!
- Let the brownies cool completely in the pan before serving. (Note: These brownies will 'mature' and improve in flavor and texture the following day or two after baking. Don't eat them all the first day and you will see what I mean!).
- These brownies can be stored, tightly covered with aluminum foil, at room temperature for up to a week.

ALL-AMERICAN BAKED BEANS
Based on a recipe from The New Basics Cookbook, authors of The Silver Palate Cookbook. The intro says, "One of those American classics, first created in the Puritan era in Boston. No cooking was allowed on the Sabbath, so they served beans Saturday night for dinner, for Sunday breakfast with codfish cakes and Boston Brown Bread, and again for Sunday lunch." Note: the 4 hour cooking time includes a one hour simmer and a 2 1/2 hour baking during which time occasional stirring is required; it does not include the overnight bean soaking time.

- Rinse and pick through beans; soak them overnight in large pot of water.
- Place the beans in a colander and rinse well under cold running water. Transfer beans to a heavy saucepan. Cover with water and bring to a boil. Reduce the heat and simmer until tender, 45 minutes to 1 hour. Drain, reserving the liquid.
- Preheat the oven to 300 degrees farenheit.
- Heat a 2-quart ovenproof casserole or dutch oven over medium heat; saute the bacon until it is slightly crisp and fat is rendered, 5 minutes. Add the onions and garlic, and cook until wilted, 5 to 10 minutes.
- Add the brown sugar and stir over medium-low heat until dissolved, about 5 minutes. Stir in the ketchup, syrup, molasses, Worcestershire, salt, and pepper. Add the drained beans and mix well.
- Cover casserole and transfer to oven. Bake, stirring occasionally (making sure you scrap the bottom of the casserole), for 2/12 hours.
- Add 3/4 cup of the reserved bean liquid, recover, and bake 30 minutes. Then remove the cover and bake until the sauce is thick and syrupy, another 10 to 15 minutes, stirring once. Serve hot.

- Combine margarine, sugar and syrup in saucepan.
- Stir over low heat until margarine melts and sugar dissolves.
- Add peanut butter and vanilla extract.
- Pour over oatmeal; mix well.
- Press into a greased 13 x 9-inch pan.
- Bake at 375 degrees F for 12 minutes.
- Topping:.
- Melt chocolate and butterscotch chips.
- Stir in peanut butter and peanuts.
- Spread over top of brownies after removing them from the oven.
- Cool and cut into squares.
