CLASSIC HOT FUDGE SUNDAE
There is a reason a hot fudge sundae is such an enduring classic: That combination of warm, rich chocolate fudge mixing with frozen ice cream and melting it slightly is absolutely irresistible. Of course, if you have homemade fudge sauce and homemade ice cream, it gets even better. Vanilla ice cream is the standard here, but feel free to use your favorite flavor, or a combination of flavors. And if you like nuts, by all means use them here. The added crunch is marvelous against all the rich creaminess.

- In a medium saucepan over medium heat, bring the cream, sugar, corn syrup or honey, cocoa, and salt to a simmer, whisking until the sugar dissolves and the mixture thickens slightly, about 5 minutes.
- Stir in the chocolate and let cook until the chocolate melts. Stir in butter and vanilla or liquor. Let cool slightly. Contrary to its name, hot fudge is best served warm, not piping hot.
- For assembly, make the whipped cream. Using a whisk or an electric mixer, beat the cream, sugar, and vanilla until soft peaks form.
- Pour a little fudge sauce into the bottoms of sundae dishes or bowls. Top with ice cream, then more hot fudge, then nuts if using. Cover all with whipped cream and a cherry if you like. Serve.

BROWNIE BRITTLE SUNDAE WITH STRAWBERRY SAUCE AND CARAMEL WALNUTS
This ice cream sundae has some of your favorite ice cream parlor components, such as a homemade warm strawberry sauce and caramel-coated walnuts. But I upped the ante and added a crispy-chewy brownie that's ridiculously quick to make. Serve with your favorite ice cream and enjoy whenever you have a sundae craving.

- Preheat the oven to 400 degrees F. Line a rimmed baking sheet with foil, leaving a 2-inch overhang on at least 2 sides. Grease the foil with nonstick cooking spray.
- For the brownie brittle: Whisk together the flour, cocoa powder and 1/4 teaspoon salt in a medium bowl. Melt the butter and chocolate in a medium saucepan over medium heat, stirring frequently, then remove from the heat and let cool slightly. Stir in the sugar, eggs and vanilla, then add the flour mixture and stir to combine. Pour the batter into the prepared pan and spread into an even, thin layer. Sprinkle with the chocolate chips. Bake until the edges are crisp and a toothpick inserted in the center comes out clean, 18 to 20 minutes. Cool in the pan on a cooling rack.
- Meanwhile, make the strawberry sauce: Combine the strawberries, sugar, lemon juice and 2 tablespoons water in a small saucepan. Cook over medium heat, stirring occasionally, until the berries break down, about 10 minutes. Stir together the vanilla and cornstarch in a small bowl until smooth, then stir the slurry into the strawberry sauce. Cook until the sauce has thickened slightly, 1 to 2 minutes. Remove from the heat to cool slightly. You should have about 1 1/2 cups of strawberry sauce.
- For the caramel walnuts: Add the walnuts to a medium saute pan set over medium heat. Cook, tossing frequently, until toasted, about 5 minutes. Transfer to a bowl to cool. In another medium saute pan, combine the sugar with 1/4 cup water over medium heat; simmer, swirling the pan, until dark amber in color, 10 to 12 minutes. Slowly whisk in the heavy cream until smooth. Once the bubbles subside, stir in the butter and toasted walnuts. You should have about 2 cups of caramel walnuts.
- Use the foil overhang to help lift the brownie out of the pan. Break or cut the brownie brittle into roughly 2-inch pieces. Scoop the vanilla ice cream into a sundae dish, then top with some of the brownie brittle, strawberry sauce and warm caramel walnuts.

SUGARED WALNUT SUNDAES IN CHOCOLATE CUPS

- Sugared Walnuts: In a deep saucepan, combine the sugar, water, orange zest and cinnamon and bring to a boil. Add the walnuts and simmer, stirring, as the water evaporates. The glaze will be shiny and transparent at first, then turn opaque as the water cooks away. When the nuts are completely coated with sugar crystals, they are done. Spread them out on a sheet pan to cool. (To wash the saucepan, soak it overnight.) The walnuts can be made up to 2 weeks in advance and stored in an airtight container.
- Sundae Cups: Spread the toasted walnuts out on a plate. Dip the rims of 6 coffee cups or mugs into the melted chocolate, then into the chopped walnuts. Turn them right side up and set aside. Dip 6 teaspoons in the chocolate and sprinkle with chopped walnuts. Let the cups and spoons cool at room temperature until set, about 2 hours. The cups can be made up to 2 days in advance.
- To assemble sundae, scoop ice cream into each chocolate-dipped coffee cup and pour espresso over it. Top with a dollop of whipped cream and sugared walnuts. Place the cup on the saucer and rest a chocolate-dipped spoon alongside.
