CHORIZO EGG CASSEROLE

- In a nonstick skillet, cook and crumble chorizo over medium-high heat until cooked through, 5-7 minutes. Drain on paper towels. In same skillet, cook and stir potatoes, onion and pepper until tender, 5-7 minutes. Add garlic; cook 1 minute longer. Remove from heat; stir in chorizo. Cool 15 minutes., Whisk eggs, cream, green chiles and chili powder. Layer a greased 11x7-in. baking dish with half each of the following: chorizo mixture, cheeses, and egg mixture; sprinkle with 1 tablespoon cilantro. Top with remaining chorizo and eggs; sprinkle with remaining cheeses and 1 tablespoon cilantro. Refrigerate, covered, overnight., Preheat oven to 350°. Remove casserole from refrigerator while oven heats. Bake, uncovered 35-40 minutes, or until set and bubbling. Let stand 10 minutes before serving. Sprinkle with remaining cilantro. Serve with sour cream and pepper sauce.

- Preheat oven to 375°. In a small skillet, cook chorizo over medium heat until cooked through, breaking into crumbles, 5-7 minutes; drain. Transfer to a large bowl. Stir in the hash browns, soup, cheeses, onion, peppers and pepper flakes. Transfer to a greased 13x9-in. baking dish. Sprinkle with panko., Bake, uncovered, until golden brown and bubbly, 40-45 minutes. Sprinkle with parsley and cilantro before serving.

CHORIZO AND PORK CASSEROLE
A lovely hearty casserole - its winter comfort food at its best. Its got a great flavour and the Chorizo and the chilli gives is enough of a zing but I always put out some cayenne for those that like it that bit hotter - I served it with mashed potatoes and vegetables but it would also be great with rice! I have put this here on Food.com as having made it as I went along I will never remember what I put in it.

Steps:
- Put the flour into a plastic bag and add the pork ( dividing into two lots is better) shake in bag and take out the meat shaking off any extra flour.
- Heat most of the oil in a large skillet on medium to high adding the meat and seal then place the meat in a casserole dish.
- Add the remaining oil and cook the onion, garlic, celery and capsicum, chilli and the chorizo a for a few minutes until it starts to get soft then add the paprika, tomatoes, wine and the chicken stock. simmer for a minute or two, and season with salt and pepper.
- Add to the pork and either cook in a moderate oven for 1 1/2 hours or in your microwave, starting on high for 2-3 minutes then set on simmer for 30 minutes.
- Serve with mashed potatoes and vegetables - or with rice.

PORK CHORIZO - BLACK BEAN CASSEROLE
This came about when I was making a Black Bean Dip. The shaker top came off a bottle of hot sauce and I got a deluge instead of a dash. I tried to save it by making a bigger batch but then that was way too much for a dip. Logic called for a complete change in direction. This is the result. Not bad, not bad at all.

Steps:
- Preheat oven to 350°F.
- Heat a dutch oven over medium high heat.
- Add oil.
- Add meat, crumble with a"Z" wire potato masher.
- Stir and cook'til browned.
- Remove with a slotted spoon, drain on paper towels.
- Drain all but 2 TBS of the drippings.
- Add Onions, Celery, Carrots, and Chilies.
- Saute (stir fry)'til onions are translucent.
- Add Garlic, saute another minute.
- Combine all ingredients but the cheeses.
- Bake 75 minutes, covered.
- Top with cheeses, bake uncovered for 6-7 minutes"til cheeses are golden brown.
- Garnish each serving with Sour Cream, Guacamole, Cilantro, and grated eggs.

- Preheat oven to 350 degrees F (175 degrees C).
- Heat olive oil in a large skillet over medium-high heat. Cook and stir ground beef, chorizo, and onion until meat is browned and crumbly, 5 to 7 minutes. Season with chili powder, cumin, paprika, salt, coriander, and black pepper. Add black beans, tomatoes, and corn; cook and stir until heated through, about 5 minutes. Transfer mixture to a 2-quart baking dish.

- Preheat the oven to 350 degrees F. Lightly grease a 9x13 inch casserole dish with cooking spray and set aside.
- In a Dutch oven or heavy bottom saucepan, cook the chorizo, starting over low heat to render out the fat. Once there's fat in the pan, turn up the heat to medium and continue to cook, breaking up any larger pieces of meat. Once the chorizo is brown, approximately 4-5 minutes, drain through a fine mesh strainer and set aside.
- Wipe down the pan and add the olive oil. Over medium-low heat, add the onions, garlic, cumin and chili powder. Cook, stirring frequently, until the onions are soft, 3-4 minutes.
- Add the diced tomatoes, reserved juice, tomato paste, black beans, spinach, and corn. Continue cooking and stirring until the spinach has wilted, 1-2 minutes, then add the chorizo back to the pot. Remove from the heat and season with salt and pepper to taste.
