Steps:

  • 1. pour the milk for the sauce into a small pan and bring to a boil. Remove from the heat, add the chili, and let infuse for 30 minutes.
  • 2. To make the churros, pour 1 cup water into a medium pan, add the salt and 1 tablespoon of the sugar, and bring just to a boil.
  • 3. Take the pan off the heat, add the flour, and mix briefly. Return the pan to low heat and stir until the mixture comes together as a rough ball that leaves the sides of the pan almost clean. Let cool for 15 minutes.
  • 4. Beat the eggs and vanilla together in a bowl. The remaining sugar and cinnamon together in a second small bowl and set both aside.
  • 5. To finish the sauce, strain the milk, discard the chili, then pour the milk back into the pan. Add the remaining sauce ingredients and heat together, stirring, until smooth and glossy but not boiling.
  • 6. Gradually beat the egg mixture into the churros until smooth. Use a food processor if you have one. Spoon the mixture into a pastry bag fitted with a 1/2 inch wide plain tip.
  • 7. Pour the oil into a large pan to a depth of about 1 inch. Heat to 340° on a kitchen thermometer. Alternately, pipe a tiny amount of the churros mixture into the oil. If the oil bubbles instantly it is ready. Pipe spirals "S" shapes or squiggly lines into the oil in small batches, snipping the end of the churros with kitchen scissors. Cook for 2 to 3 minutes, until they float and are Golden all over, turning over if needed. Lift out of the pan with a slotted spoon and drain on paper towels. Continue piping and frying until all the mixture is used.
  • 8. Transfer the churros to plate lined with nonstick parchment paper and sprinkle with the cinnamon sugar. Reheat the chili sauce if needed, then pour into a shallow dipping bowl or individual bowls and serve with a warm churros.

Squiggly churros are a crispy, crunchy alternative to sufganiyot for one of the nights of Hanukkah. Serve them coated in cinnamon sugar and, instead of injecting them with jam, dip them into strawberry sauce - or raspberry sauce, Mexican chocolate with cinnamon, even guava sauce. For fluted edges on your churros, you'll need a pastry bag fitted with a large French star pastry tip, but you could also use a resealable plastic bag with a tip cut off. To prepare the churros in advance, try this trick: Pipe the dough into 6-inch lengths on a parchment-lined baking sheet, then freeze. Fry directly from the freezer in oil heated to 375 degrees (mixture will bubble up).

Churros With Strawberry Sauce image

Steps:

  • Prepare the sauce: Wash, dry and hull the strawberries, then transfer them to a food processor. Pulse a few times until the strawberries are almost puréed. Transfer strawberry mixture to a medium saucepan, cover, and simmer over low heat until slightly thickened, about 20 minutes. Remove from heat, cool slightly, and stir in brown sugar and vanilla extract. Add more brown sugar to adjust sweetness to taste; set strawberry sauce aside. (You should have about 2 cups.)
  • Prepare the churros: Pour canola oil into a large pot to a depth of 2 inches. Line a baking sheet with paper towels. Pour granulated sugar and cinnamon into a wide, shallow bowl and stir to combine.
  • In a medium pot or saucepan (preferably nonstick) over medium-high heat, bring liqueur, salt and 1 1/2 cups water to a boil. Remove from heat, then gradually add flour, stirring with a wooden spoon. Beat until well blended; the dough will be sticky and should resemble wet cement.
  • When the dough is done, heat the oil to 350 degrees. Working in batches if necessary, scrape the dough into a pastry bag fitted with a large French star pastry tip, or use a resealable plastic bag with the tip cut off.
  • Pipe the dough into the hot oil in 6- to 8-inch lengths, using a knife to slice the dough away from the pastry tip as you go; do this in batches of four or five. Fry the churros, using tongs or chopsticks to turn them over a few times and keep them from melding together, until they are deep golden brown, about 6 minutes.
  • Remove from oil and transfer to the prepared baking sheet to drain. While the churros as still hot, transfer them to the bowl with the cinnamon-sugar mixture and turn to coat evenly.
  • Repeat with the rest of the dough. Serve warm with strawberry dipping sauce.

Steps:

  • Mix the sugar and cinnamon for the churros in a wide, shallow dish; this is for coating the cooked churros.
  • Churros: Put the flour into a bowl and stir in the baking powder, then beat in the olive oil and 1 cup freshly boiled water. Keep mixing until you have a warm sticky dough, and let rest for about 10 minutes or for as long as it takes for the corn oil to heat up.
  • Heat the oil in a smallish saucepan; it should come about a third of the way up the sides of the pan. When you think it's hot enough, toss in a cube of bread and see if it sizzles and browns. If it browns in about 30 seconds, it's hot enough; or if you're using an electric deep-fat fryer regulate the temperature, it should be at 325 degrees F. Keep a watchful eye on your hot oil pan at all times.
  • Preheat the oven to 175 degrees F.
  • When you are ready, load up a piping bag with a large star shaped nozzle (8mm) and fill it with the churro dough. Squeeze short lengths, approximately 1 1/2 to 2 inches, of dough into the hot oil, snipping them off with a pair of scissors as you go. Cook about 3 or 4 at a time. Once they turn a rich golden brown, fish them out with a slotted spoon or tongs onto a kitchen towel lined baking sheet. To keep the churros warm while you fry the remaining dough. Blot them with paper towels and transfer them to a parchment lined baking sheet. Put the baking sheet into the oven to keep the churros warm. Even if you let them sit out of the oven, they do need 5 to 10 minutes to rest before you eat them, to allow them to set inside.
  • Chocolate sauce: Melt all of the chocolate sauce ingredients in a heavy based saucepan over low heat. Once combined and the chocolate has melted, remove the pan from the heat and set it aside in a warm place.
  • Toss the hot churros into the sugar and cinnamon mixture and shake them about to get a good covering, just before serving. Arrange the churros on a serving platter and serve.
  • Pour the chocolate sauce into individual pots for serving (to avoid the double dipping dilemma) and dip'n'dunk away.

Cinnamon Churros with Mexican Chocolate Dipping Sauce image

Steps:

  • In a large Dutch oven or countertop fryer using a high heat thermometer, bring the canola oil to 375 degrees F.
  • For the chocolate sauce: Bring a double broiler to a simmer over medium-low heat. Carefully melt the chocolate. Remove from the heat. With a wooden spoon or heat resistant spatula, stir in the heavy cream until the sauce is smooth. Set aside.
  • For the churros: Set a large saucepot over medium heat. Add 1 cup water, the butter, sugar and salt. Bring to 155 degrees F, then dump in the flour and stir with a wooden spoon to incorporate and remove lumps, about 1 minute.
  • Using the spoon, add the eggs into the batter one at a time, beating after each addition, until fully incorporated. Spoon the batter into a pastry bag fitted with a star tip and carefully pipe into the heated oil, forming 6-inch strips or free form shapes. Do not overcrowd the pot. Fry for 3 to 5 minutes, turning once as the underside browns. Remove with a spider or slotted spoon and drain on paper-towel-lined sheet tray or plate.
  • To finish: Working quickly, combine the sugar and cinnamon together in a large mixing bowl. Gently add the hot churros, tossing to coat. Serve with the chocolate dipping sauce.

  • finely chop the chili's and garlic.
  • Add the sugar, chili's and vinegar to a pan and bring to the boil. Reduce the heat and simmer for 15 minutes. Add the garlic and simmer for a further fifteen minutes until the mixture becomes thickened and syrupy.
  • Transfer to a sterilised jar and allow to cool. This can be kept in the fridge for up to a month. (Only lasts a week in our house though!).

Steps:

  • In a small saucepan, bring 2 cups water to a boil. Turn off heat, and add dried chile; let stand until softened, about 10 minutes. Drain liquid; cut chili into small pieces.
  • Combine cream and glucose in a small saucepan set over medium heat; bring to a simmer. Add chocolate, chili, paprika, and red pepper, stirring until chocolate melts to combine. Serve on the side.

Pumpkin Spice Churros with Salted Maple Caramel Dip image

Steps:

  • Pour maple syrup into a deep, heavy-bottomed pot. Bring to a boil. Reduce heat to low and let simmer, stirring with a spoon, until syrup starts to coat the spoon and has a caramel-like consistency, about 15 minutes.
  • Whisk 1/4 cup butter into the syrup until melted, about 2 minutes. Add heavy cream and salt, whisking constantly to combine. Pour sauce into a bowl. Cover with plastic wrap and refrigerate until mostly cooled, about 15 minutes.
  • Whisk flour and 1 teaspoon pumpkin pie spice together in a small bowl.
  • Whisk the remaining 1 teaspoon pumpkin pie spice and white sugar together in a large bowl to make pumpkin spice sugar.
  • Combine water, pumpkin puree, 6 tablespoons butter, brown sugar, 1 teaspoon salt, and vanilla extract in a small saucepan over medium heat. Whisk thoroughly. Bring to a boil; add the flour mixture. Cook and stir vigorously until dough is thickened, 5 to 8 minutes.
  • Transfer dough to the bowl of a stand mixer with paddle attachment. Beat until cool, about 1 minute. Add eggs, 1 at a time, allowing each to incorporate before adding the next. Beat until dough is glossy and thick.
  • Heat 2 to 3 inches of oil in a large, heavy pot to 375 degrees F (190 degrees C). Line a baking sheet with paper towels.
  • Scrape the dough into a pastry bag fitted with a large star tip. Test the oil with a small squeeze of dough; churro should float to the top of the oil and brown on the bottom in about 30 seconds. Adjust the heat if necessary.
  • Pipe roughly 3-inch strips of dough into the oil, keeping the tip of your pastry bag 1 to 2 inches above the oil. Fry until golden, brown, about 30 seconds per side.
  • Drain churros on paper towels for 1 minute; toss in the pumpkin spice sugar until evenly coated. Serve warm with the salted maple caramel sauce.
