- In a large saucepan, bring 8 cups water to a boil. Add tomatoes, a few at a time; boil for 30 seconds. Drain and immediately place tomatoes in ice water. Drain and pat dry; peel and finely chop. Place in a stockpot. Add onions and peppers., Place mustard and celery seed on a double thickness of cheesecloth; bring up corners of cloth and tie with string to form a bag. Add spice bag and the remaining ingredients to the pot. Bring to a boil. Reduce heat and simmer, uncovered, for 60-75 minutes or until slightly thickened. Discard spice bag., Carefully ladle relish into hot 1-pint jars, leaving 1/2-in. headspace. Remove air bubbles; wipe rims and adjust lids. Process in boiling-water canner for 20 minutes.

- Blanch Tomatoes to remove skin.
- Chop peeled tomatoes into cubes, cut peeled onions into 1cm cubes, cut peeled and cored apples into 1cm (½ in) cubes, peel cucumber and cut into cubes taking out the seeds.
- Combine tomatoes, onions, cucumbers and apples in large bowl, sprinkle salt over - cover and stand for a few hours overnight.
- Combine vinegar and sugar in large pan, stir over heat until sugar dissolves. Bring to boil, add drained vegetables, bring back to boil, reduce heat. Simmer 10 minutes.
- Mix flour, curry powder, garlic and turmeric to smooth paste with water, add to pan, stir until mixture boils and thickens. Reduce heat and simmer 10 minutes, or slightly longer to get to the consistency that you like.
- Remove from heat, pour into sterilized jars.

Another magazine find. The lemon rind and juice get utilized in this salad. I love the lemon oil fragrance in the lemon skin! I had it as a side dish with shrimp scampi and it went well. Nice with sea salt.

- With a vegetable peeler, carefully remove peel from lemon, leaving white pith behind.

- In a food processor, process tomatillos, tomatoes, peppers, onion, garlic, cilantro and parsley in batches until chopped. , Transfer to a large stockpot; stir in oil, vinegar, olives, salt, pepper and pepper flakes. Bring to a boil. Reduce heat; cover and simmer 20 minutes or until vegetables are tender. , Add lemon juice to four hot pint jars, 1 tablespoon in each. Ladle hot mixture into jars, leaving 1/2-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight. , Place jars into canner with simmering water, ensuring that they are completely covered with water. - 1. I've used good quality sandwich bread, but day old focaccia bread, french bread or ciabatta bread or buns works wonderfully as well. For cheese Iv'e used pepper jack, Asadero, Muenster, Cheddar, I do prefer a white melting cheese.
- 2. Slice tomato(es) and cook over low heat in a non stick skillet with a tsp of olive oil for about 10 min. turning once.
- 3. Spray one side of bread with spray oil, spread Thai chili sauce on other side. You want the Thai chili sauce on the inside of your sandwich, place cheese on on Thai sauce.
- 4. Place tomatoes on next.
- 5. Then onion slices and cilantro.
- 6. Finish off with more cheese. Toast on griddle, grill or in skillet till bread is browned and cheese is melted.

- Make Relish: Remove stem and core from green tomatoes and roughly chop into ½ inch or 1 inch pieces. Add to a large pot with heat turned off while you prepare rest of ingredients.
- Peel, roughly chop and add onions to pot. Remove stem and seeds from red bell peppers and roughly chop as well. Remove core from apples, discard, and roughly chop (including peel). Mince garlic and add to pot along with onions, red bell peppers, and apples.
- Add apple cider vinegar and salt to pot and set over high heat. When vinegar comes to a boil turn down to low and simmer for 1 hour and 15 minutes while stirring occasionally.
- While relish is simmering finely chop jalapenos (only remove/discard seeds for half of them), chop cilantro, and set aside. I highly recommend wearing latex or rubber gloves while chopping the jalapenos otherwise your hands could sting for a few hours…I know this from experience!
