BANANA-CINNAMON CAKE

Steps:
- Heat oven to 350°F (325°F for dark or nonstick pan). Grease and lightly flour 12-cup fluted tube cake pan, or spray with cooking spray.
- In large bowl, beat cake mix, water, bananas, butter, cinnamon and eggs with electric mixer on low speed 30 seconds, then on medium speed 2 minutes, scraping bowl occasionally. Stir in walnuts. Pour into pan.
- Bake 47 to 57 minutes or until toothpick inserted in center comes out clean. Cool in pan 10 minutes. Turn pan upside down onto cooling rack or heatproof serving plate; remove pan. Cool completely, about 2 hours. In small bowl, stir glaze ingredients until thin enough to drizzle. Drizzle over cake. Store loosely covered.

CINNAMON BANANA WALNUT CAKE

- In a large bowl, sift together flour, sugar, baking soda, salt, cinnamon, ground ginger, and nutmeg. In a blender, combine banana puree, vanilla, canola oil, water, and blend well. Whisk liquid mixture into the dry ingredients and combine thoroughly. Pour batter into greased 9" x 13" pan and sprinkle chopped walnuts over the top. - In a large bowl, combine the cake mix, eggs, water and oil. Beat on medium speed for 2 minutes. Combine walnuts, sugar and cinnamon. , Sprinkle a third of the nut mixture into a greased 10-in. fluted tube pan. Top with half of the batter and another third of the nut mixture. Repeat layers. , Bake at 350° for 35-40 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.

- Preheat oven to 350 degrees.
- Butter a 10 inch tube pan; dust with flour, tapping out excess, and set aside.
- Combine walnuts, sugar and cinnamon in a small bowl.
- Set aside.
- To make banana batter, sift together the flour, baking powder and salt onto a sheet of waxed paper.
- Set aside.
- In a large bowl, cream the butter with an electric mixer on high until light. Gradually beat in the eggs, one at a time. Beat in sour cream, mashed bananas and vanilla.
- Change mixer speed to low and beat in the flour mixture just until blended.
- Spoon half of the batter into the prepared pan.
- Scatter half of the walnut and sugar sprinkle over the batter.
- Thinly slice the third banana over the batter.
- Top with remaining batter and scatter rest of walnut and sugar sprinkle over top.
- Bake about 1 hour and 15 minutes, when skewer inserted comes out clean.
- Cool in pan on rack for 20 minutes. Carefully loosen the cake from the sides then invert onto wire rack turning right side up.
- Sprinkle with confectioners sugar, if desired.

BANANA CHOCOLATE WALNUT CAKE

- Preheat oven to 375°F with rack in middle. Butter a 9-inch square cake pan.
- Stir together flour, baking soda, and salt.
- Beat together softened butter (1 stick) and 3/4 cup sugar in a medium bowl with an electric mixer at medium speed until pale and fluffy, then beat in eggs 1 at a time until blended. Beat in bananas, yogurt, and vanilla (mixture will look curdled).
- With mixer at low speed, add flour mixture and mix until just incorporated.
- Toss together chocolate, nuts, cinnamon, melted butter, and remaining 1/4 cup sugar in a small bowl. Spread half of banana batter in cake pan and sprinkle with half of chocolate mixture. Spread remaining batter evenly over filling and sprinkle remaining chocolate mixture on top.
- Bake until cake is golden and a wooden pick inserted in center of cake comes out clean, 35 to 40 minutes. Cool cake in pan on a rack 30 minutes, then turn out onto rack and cool completely, right side up.
