SAUTEED CIPOLLINI ONIONS

Steps:
- Bring 6 cups water to a boil in a medium saucepan; add salt. Boil onions until softened, about 4 minutes. Drain, and pat dry. Set aside.
- Heat butter and oil in a large saute pan over high heat, stirring to combine, until butter melts. Add onions, and cook, stirring occasionally, until browned,about 4 minutes. Reduce heat to medium-low; add thyme, and season with salt. Cover, and cook until onions are tender, 4 to 5 minutes. Serve warm.
COUSCOUS SALAD WITH CHICKPEAS, DATES & CINNAMON
The richness of Saigon Cinnamon flavors this salad, created by Chef Suzanne Goin of Lucques in Los Angeles. Dates, carrots and toasted pine nuts add color and complexity to the couscous.

Steps:
- Finely chop white part of green onions.
- Slice green parts; reserve for salad.
- Heat 1 tablespoon of the oil in medium saucepan on medium heat.
- Add white onion pieces; cook and stir 5 minutes.
- Stir in chicken broth, cinnamon, 1/4 teaspoon of the black pepper and red pepper and bring to boil.
- Add couscous; cover. Remove pan from heat. Let stand 5 minutes.
- Whisk vinegar, 1/2 teaspoon of the salt and remaining 6 tablespoons oil in small bowl.
- Fluff couscous with fork; spoon into large bowl.
- Add sliced green onions, chickpeas, carrots, dates, pine nuts, remaining 1/4 teaspoon salt and remaining 1/4 teaspoon black pepper; toss lightly.
- Add vinaigrette; toss again.
- Serve immediately or refrigerate until ready to serve.
- Garnish with chopped cilantro, if desired.
BASQUE SALAD
This probably is an interpretation of a Basque salad and not traditional-who knows? Normally I would use a 'bleu de Basque' cheese but the store was out of stock and I substituted Oregon made 'Smoky Bleu' cheese from Rogue Creamery. Steps:
- In a jar with a tight fitting lid combine olive oil, vinegar, sugar, Dijon mustard, oregano and pepper. Shake well.
- Tear the lettuce and place on individual salad plates.
- Add the tomato pieces, walnuts, and blue cheese.
- Garnish with orange sections and egg quarters; drizzle with raspberry vinaigrette. Finish with a sprinkle of fresh cracked black pepper.

CARAMELIZED CARROT PUREE
A delicious and unique way to prepare carrots. Chef Suzanne Goin serves this at her much-acclaimed L.A. restaurant. Recipe was printed in her cookbook, "Sunday Suppers at Lucques". It's a great dish for fish or poultry.

Steps:
- Steam the carrots with the cilantro stems for about 20 minutes, until tender.
- When the carrots are almost done, heat a large pot over high heat for 1 minute. Pour in 1/2 cup olive oil, and add the onion. Season with 2 teaspoons of salt and a frew grindings of black pepper, and cook the onion for about 5 minutes, stirring often, until it's translucent.
- Add the steamed carrots and cilantro leaves and cook another 8 minutes, stirring and scraping the pot with a wooden spoon, until the carrots are lightly caramelized.
- Puree the mixture in a food processor until it's smooth. With the motor running, slowing pour in the remaining 1/4 cup olive oil, and process until the oil is incorporated and the puree is very smooth. Season to taste and serve warm.
