PESTO TUNA
I had tuna, but none of the usual ingredients I mix in. I found pesto in the back of the fridge. It's unusual I know, but we really liked the flavour combination, even my husband who hates trying new things :-) Note: the cook time is for refrigeration.

Steps:
- Make sure the tuna is as well drained as possible, I squeeze mine in a sieve.
- Mix with pesto and pepper to taste.
- If you want a more"spreadable" consistency, mix in the mayonnaise.
- A little lemon juice adds some zing if you like a more tangy flavour.
- Refrigerate for at least 20minutes to allow flavours to meld.
- Serve either as a sandwich or on crackers.
GRILLED CITRUS TUNA
Steps:
- In a large bowl, combine orange juice, olive oil, oregano, parsley, salt, and pepper. Mix well. Place the tuna steaks in the bowl, turn to coat both sides with marinade; cover and refrigerate 30 minutes.
- Preheat an outdoor grill for medium-high heat.
- Remove tuna from the marinade and shake off excess. Place tuna onto preheated grill and cook to desired doneness, about 5 minutes per inch for medium-rare or 10 minutes per inch for medium-well.

CITRUS PESTO TUNA
I got this recipe from Weber's Real Grilling cookbook, and tried it today for my first tuna recipe. The marinade was great, although the cooking time seemed a bit short (the recipe says 3-4 minutes, turning once) so I increased it to 4 minutes per side and it was overdone. I'm including the original cooking times in this recipe, but it depends on the size of the steak, so I'll have to keep experimenting!

Steps:
- Combine all ingredients except for the steaks in a bowl or large plastic bag.
- Marinade the steaks for about half an hour.
- Grill steaks on hot grill, 3-4 mintues turning once. The tuna steaks should be well seared on the outside but still pink on the inside.

SWORDFISH WITH CITRUS PESTO

- Blend the basil, pine nuts, garlic, zests, juices, salt, and pepper in a food processor until the mixture is finely chopped. With the machine running, gradually add the olive oil until the mixture is smooth and creamy. Transfer to a bowl and stir in the Parmesan.
- Place a grill pan over medium-high heat or preheat a gas or charcoal grill. Brush both sides of the swordfish fillets with olive oil and season with salt and pepper. Grill the swordfish about 3 to 4 minutes on each side for a 1-inch thick fillet.
- Transfer the grilled swordfish to serving plates, top with the citrus pesto, and serve.

- Peel and section grapefruit over a bowl, reserving juice. Refrigerate half of the grapefruit sections. Add remaining grapefruit to the reserved grapefruit juice. Add the lemon juice, lime juice, honey, dill, red pepper flakes and ginger. Remove 1/4 cup for basting; cover and refrigerate. Pour remaining marinade into a large resealable plastic bag; add the tuna steaks. Seal bag and turn to coat; refrigerate for 30 minutes, turning once., Drain and discard marinade. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill tuna, uncovered, over medium heat or broil 4 in. from the heat for 6-7 minutes on each side, basting frequently with reserved marinade. , Top tuna steaks with reserved grapefruit sections. Cover and cook 5 minutes longer for medium-rare or until slightly pink in the center.

- Boil the pasta. Meanwhile, tip the tuna and its oil into a large bowl with the pesto. Mash together with a wooden spoon. Stir in a third of the cheese and all of the tomatoes. Heat the grill to high.
- When the pasta is cooked, drain and toss through the pesto mix. Tip into a shallow baking dish and scatter with the remaining cheese. Place the dish under the grill for 3-4 mins until just melted, then serve with a green salad and garlic bread.
