Rice is favored in my family so I make this pleasant, citrus side dish often.

- In a large saucepan, saute celery and onions in butter until tender. Add rice; cook and stir for 5 minutes or until lightly browned. , Add the orange juice, water and salt. Bring to a boil. Reduce heat; cover and simmer for 20 minutes or until liquid is absorbed and rice is tender. , Remove from the heat. Gently stir in orange pieces; sprinkle with almonds.

Steps:
- Cook rice using desired method but use chicken broth instead of water.
- Cover the bottom of a skillet with about 2 tablespoons of cooking oil.
- Add the red pepper and onion and pan fry until they are nice and shriveled (about 10 minutes).
- Add the cook riced and fry with the red peppers and onion. Add more oil if necessary.
- Add parsley, and salt and pepper to taste, and cook for a minute or two longer.

- Combine the warm water and saffron in a small bowl. Heat the olive oil in a saucepan over medium heat. Add the shallot and sauté until translucent, about 3 minutes. - Melt butter in a large saucepan over medium heat; cook and stir carrots, celery, red bell pepper, onion, and garlic until the vegetables begin to soften, about 5 minutes.
- Gently stir rice, corn, and peas into vegetables to combine. Pour chicken broth, soy sauce, and Worcestershire sauce into rice mixture. Season with lemon pepper, parsley, thyme, saffron, salt, and black pepper, bring to a boil, and reduce heat to low. Cover and simmer until rice is tender, about 20 minutes. - Rice -- In a medium size sauce pan, melt the butter over medium to medium high heat and add the rice. Lightly toast the rice, not too hot, you don't want it to burn. It will take just a couple of minutes.
- Liquid -- Add in the broth, orange juice, garlic, thyme, and celery, and cover and cook on medium low until rice has absorbed all the water. About 15 - 20 minutes. Just follow the package directions.
- Seasoning -- After the rice has cooked. Remove from the stove and add in the scallions, cilantro, almonds, 1 tablespoon orange juice and 1 teaspoon lime juice and zest, salt and pepper to taste. Mix well.
- Serve -- Serve in a nice bowl topped with a nice orange slice or some extra almonds. A great flavorful rice. ENJOY!

- Wash rice well and then soak it for about 15 to 20 minutes in plenty of cold water (enough to cover the rice by 1 inch). You should be able to easily break a grain of rice by simply placing it between your thumb and index finger. Drain well.
- Heat about 3 tbsp extra virgin olive oil in a large sauce pan with a lid (like this one) until oil is shimmering but not smoking. Add onions and cook for about 3 to 4 minutes until translucent. Add garlic and orzo pasta. Toss around for a bit until the orzo has gained some color then stir in the rice. Toss to coat.
- Now add lemon juice and broth. Bring liquid to a rolling boil (it should reduce a little), then turn heat to low. Cover and let cook for about 20 minutes or until rice is done (liquid should be fully absorbed and rice should be tender but not sticky.)
- Remove rice from heat. For best results, leave it covered and do not disturb rice for about 10 minutes or so.
