CLAMS FOR CLAM-HATERS
I'm just not a fish lover. But this one REALLY works for me. Makes a great appetizer for a crowd, too. Festive, pretty, delicious, and FULL of IRON! 8-)

- Scrub clam shells well. In a small glass bowl, microwave/melt half of the butter. In a Dutch oven, heat olive oil and the remaining half of the butter on medium heat. Sauté the garlic lightly. Remove half of the garlic from the Dutch oven and add it to the melted butter.
- In a small skillet, toast the breadcrumbs. Pour the melted butter/garlic over the crumbs. Stir in the cheese. Toast a bit more, then set aside.
- Into the Dutch oven with the oil, butter, and garlic mixture, add the basil, sherry, and clam juice. Bring to a rapid boil and reduce a bit. Add a little salt and a good portion of pepper. Drop in the clams and cover with tight lid. Cook for 4 -5 minutes. Remove lid, stir well. If all are open, great - if not, re-cover and cook for another minute or so. Remove any that are not open.
- Place open clams into serving bowls. Add ½ of the broth. Sprinkle generously with breadcrumb mixture. Pour remaining broth over breadcrumbs. Garnish with extra basil. Dive in!

HATTERAS STYLE CLAM CHOWDER
This is 'Hatteras style.' I work in a restaurant near the North Carolina coast and make this two times a week. I have scaled down the batch for home use. It is very simple. You can also use the bacon grease to saute the vegetables in.

- In a large pot over medium heat, cook onion, celery and carrots in oil until they begin to soften. Stir in potatoes, clams, clam juice, thyme, pepper and bacon. Bring to a boil, then reduce heat and simmer 20 minutes, or until potatoes are tender.

- Place clams in a stockpot; top with the next 8 ingredients. Add beer and oil; bring to a boil. Reduce heat; simmer, covered, for 10 minutes., Stir; cook, covered, until clams open, 5 to 7 minutes longer. Discard any unopened clams. Ladle into bowls; serve with grilled bread.

- In large pot over high heat, bring 4 quarts of water and 2 tablespoons of kosher salt to a boil. Add the linguine and cook according to the package directions until just shy of al dente (the pasta should still be firm to the bite since it will cook another minute or two in the sauce).
- Meanwhile, in a very large sauté pan over medium-high heat, heat the olive oil until hot but not smoking. Add the shallots and garlic and sauté until just golden, about 30 seconds. Add the wine, red pepper flakes, 3/4 teaspoon kosher salt, clams, and 1/4 cup of the parsley; bring to a simmer and cook, covered, until the clams open, 6 to 8 minutes. Discard any unopened clams.
- Reserving 1/2 cup of the cooking water, drain the linguine in a colander (do not rinse). Add the pasta to the sauté pan with the clams. (If you don't have room for everything in one pan, transfer the clams to a plate and cover to keep warm. When ready to serve, add them back to the pasta on a serving platter). Increase the heat to medium and cook the linguini with the clams, tossing occasionally, until the pasta absorbs most of the sauce and is just tender, 1 to 2 minutes. If necessary, add some of reserved cooking water to keep moist. Remove the pan from the heat. Add the butter, lemon zest, lemon juice, and the remaining 2 tablespoons of parsley; toss to coat. Taste and adjust the seasoning with more salt, lemon zest and/or lemon juice, if necessary. Transfer to a serving dish or bowls and serve.
- Note: When cooking with wine, select a bottle that is inexpensive (under $10) but still good enough to drink. Avoid "cooking wines," which are salty and include additives.
