HAMBURGER CHOP SUEY

Fast, hearty and colorful, this chop suey uses up those summer garden peppers and spinach. And if you happen to have a nice stand of pea pods, they'd be delicious thrown into the mix. Happy eating! -Beth Pisula, Freeport, Illinois

Hamburger Chop Suey image

Steps:

  • In a small bowl, combine the cornstarch, ginger and bouillon; stir in water and soy sauce until blended. Set aside., In a large nonstick skillet or wok, stir-fry the beef, celery, mushrooms, peppers and onion until meat is no longer pink and vegetables are tender. Drain. Stir in the bean sprouts, water chestnuts and spinach., Stir reserved sauce mixture; add to the pan. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Serve with rice.

2 teaspoons minced fresh gingerroot
1 teaspoon reduced-sodium beef bouillon granules
3/4 cup water
1/3 cup reduced-sodium soy sauce

1 can (8 ounces) sliced water chestnuts, drained
1 cup fresh spinach, torn
3 cups hot cooked rice

Ground Beef Chop Suey image

Steps:

  • Cook celery, onion and ground beef about 5 minutes until meat begins to brown.
  • Blend cornstarch with water and stir into beef mixture.
  • Add bouillon cube, soy sauce and salt.
  • Cook, stirring constantly, until sauce is thickened and clear.
  • Stir in bean sprouts or cabbage.
  • Cook covered about 3 minutes until cabbage is tender if cabbage is used.
  • If bean sprouts are used, heat thoroughly.
  • Serve over rice.

Steps:

  • Brown the ground beef with onions and celery; add the rest of the ingredients (except the bean sprouts) and stir together well.
  • Butter or grease casserole dish.
  • Place the ingredients in the casserole dish.
  • Bake at 325° for 1-1/2 hours.
  • Sprinkle with bean sprouts and serve.

1 lb ground beef
2 large onions (sliced)
1 stalk celery (Diced)
1 (10 1/2 ounce) can cream of chicken soup
1 (10 1/2 ounce) can mushroom soup
2 1/2 cups water
1 cup uncooked rice (not instant)

  • Heat oil in large pot over high heat.
  • Brown beef stew meat mixing in cut up onions and celery.
  • Add water, soy sauce and beaded molasses.
  • Simmer for 3 hours.

Steps:

  • Heat oil in large nonstick skillet over medium-high heat.
  • Add beef; cook until browned.
  • Add beef broth, soy sauce, ginger and mustard; mix well.
  • Lower heat.
  • Add fresh vegetables; cover. Simmer for 1 hour (more or less, depending on the quality of the beef).
  • Add canned vegetables; recover. Simmer for a half hour.

  • Heat shortening in a large, deep skillet.
  • Sear ground beef until it cooks through.
  • Then add onion and saute for 5 minutes.
  • Add celery, hot water, salt and pepper.
  • Cover skillet and simmer for 5 minutes.
  • Add sprouts and heat to boiling.
  • In a small bowl combine the cold water, cornstarch, soy sauce and sugar.
  • Mix together and add to skillet mixture.

CLARA'S GROUND BEEF CHOP SUEY

This was my mother's (Clara) recipe. I have no idea where she got it but this was a staple at our house for years. All of us children (5) have tried to make this recipe taste like hers. We can come close but it never tastes as good as when she made it. Maybe it was the love. She died at the age of 86 and I'm posting this recipe in her memory.

  • Cook rice and celery together in water until done (about 20 min.); drain.
  • Dice bacon and fry.
