Skillet Pork Chops With Currant Jelly image

Steps:

  • Heat skillet to medium-high heat and put salt and pepper in the pan and add the chops and brown both sides; about one minute per side.
  • Mix the jelly and the mustard and put a dollop of this blend onto the chops.
  • Cover pan and reduce heat to low.
  • Cook about 20 minutes or until pork is cooked through. Use the pan juice as gravy.
  • Serve with applesauce.

Steps:

  • Put the jelly, sugar, peel and boiling water into a saucepan.
  • Stir over low heat until jelly and sugar dissolve.
  • Bring mixture to a boil, then remove from heat and add gelatin, stir until fully dissolved.
  • Strain the mix and add claret and brandy.
  • Rinse 3-4 cup jelly mold with cold water, then pour the mix into the mold and refridgerate until "set"; about 4 hours.
  • Flip out of the mold and serve.
