Cocoa Pebbles Cereal Cookies Recipe - (5/5) image

Steps:

  • 1. Preheat oven to 350. 2. Line four cookie sheets with parchment paper and set aside. 3. Combine margarine and sugars in the bowl of an electric mixer; beat until fluffy. 4. Add eggs and vanilla; beat until smooth. 5. Add flour, baking soda, baking powder and salt. Mix to combine. 6. With the mixer on the LOWEST setting, stir in Cocoa Pebbles. (If you prefer, you can do this by hand with a silicone spatula or wooden spoon.). 7. Drop batter by tablespoonfuls onto prepared cookie sheets. COOKIES WILL SPREAD, so make sure you leave sufficient space between them --I'd say about two inches. 8. Bake for 10-12 minutes. Allow cookies to cool for 3-4 minutes on the tray, then remove with a metal spatula and allow to cool completely on a rack.

This is my adaptation of a "chocolate chip crunch cookies" recipe I found in a cookbook, since I didn't have all the necessary ingredients for the original recipe. These were very well-received; they're an interesting twist to the regular chocolate chip cookie.

COCOA PEBBLES (COOKIES)

This is a delicious NO BAKE cookie, with chocolate, peanut butter, and oatmeal. I recieved this recipe from a teacher when I was in the 4th grade, (about 1972), and it has been a favorite in our family since! I usually double (sometimes quadruple) the recipe, and I like extra oatmeal in mine.

Steps:

  • Mix cocoa and milk in a sauce pan.
  • Stir in the sugar and butter and bring to a boil, for 1 minute.
  • Remove from heat and stir in peanut butter and oatmeal.
  • Drop by spoonful onto waxpaper.
  • Let cool until firm.

CEREAL COOKIES

This recipe was passed down from my Great Grandma Crawford. It is a simple cookie that goes great with coffee or hot chocolate on a cold winter's day. I've baked them with both butter or Crisco. The butter version is a flatter cookie, similar to the ones my Grandma made. Enjoy these cookies, they are a real treat from my childhood.

Steps:

  • Mix brown sugar and white sugar in the mixer.
  • Add butter, beaten eggs, and vanilla. Mix well.
  • Mix four,baking soda, baking powder, and salt in a separate bowl. Add to sugar mixture, mix well.
  • Add oatmeal, crushed cornflakes, Rice Crispy cereal, and coconut. (When I do this in my mixer the batter is very thick.).
  • Spoon on a cookie sheet and flatten a little with a fork or spoon.
  • Bake at 400 degrees for 8-10 minutes.
