COCONUT COOKIES

Creamy coconut takes center stage in this sweet cookie from Maury Rubin of Birdbath Bakery.

Steps:

  • Line baking sheets with parchment paper or nonstick baking mats; set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, cream together butter and granulated sugar; add brown sugar and mix until well combined. Add eggs and mix until fully incorporated.
  • In a large bowl, whisk together flour, baking soda, and salt. Add half of the flour mixture to the butter mixture and mix to combine. Add remaining flour mixture and mix to combine. Add half of the coconut chips; mix to combine. Add remaining coconut chips and mix to combine.
  • Using a 2-inch ice cream scoop, scoop out balls of dough onto prepared baking sheets at least 3 inches apart; using the flat bottom of a drinking glass, flatten dough slightly. Transfer baking sheet to refrigerator; let chill for 30 minutes.
  • Preheat oven to 350 degrees.
  • Transfer baking sheet to oven and bake until golden brown, 14 to 16 minutes. Remove from oven and transfer to a wire rack to cool. Let cool at least 20 minutes before serving.

2 cups (4 sticks) unsalted butter, cut into small pieces, room temperature
1 1/4 cups granulated sugar
1 1/2 cups packed light-brown sugar
2 large eggs, lightly beaten
2 3/4 cups plus 4 teaspoons all-purpose flour
2 teaspoons baking soda
Pinch of fine sea salt
8 cups coconut chips

Coconut Peter Paul Mounds Bars image

Steps:

  • Mix all candy ingredients in a bowl.
  • Pour into a 9x13-inch cookie sheet.
  • Chill.
  • Slice into bars.
  • Use toothpick to dip in chocolate coating.
  • Melt paraffin in a medium pan on very low heat.
  • Add chocolate chips and stir till melted (VERY LOW HEAT or chocolate will burn).
  • Dip and enjoy.

2 (14 ounce) bags coconut
1 (14 ounce) can sweetened condensed milk
1/2-1 cup oleo
1 (1 lb) box powdered sugar
1 (12 ounce) package chocolate chips
1 paraffin wax

MOUNDS COOKIES

These are a chocolate chip cookie based on one of my favorite candies - the Mounds bar. Change the dark chocolate chips to milk chocolate and add some chopped toasted almonds and you have an Almond Joy in cookie form.

Steps:

  • Preheat oven to 350 degrees.
  • Cream together butter and sugars.
  • Add in eggs, one at a time, beating well between each addition.
  • Add in vanilla.
  • Add 1/2 cup flour, baking soda and powder, and salt and mix well.
  • Gently stir in remaining flour.
  • When almost combined, stir in coconut and chocolate chips.
  • Drop by tablespoonfuls onto a baking sheet about 2 inches apart.
  • Bake for 14-16 minutes.
  • Let cool on cookie sheet for 5 minutes and then cool completely on wire rack
  • Store in an airtight container at room temperature for several days or in the freezer for several months.

Steps:

  • In a large bowl, beat shortening and sugars until blended. Beat in eggs and vanilla. In another bowl, whisk flour, baking powder, baking soda and salt; gradually beat into sugar mixture. Stir in oats and coconut., Divide dough into 4 portions. On a lightly floured surface, shape each into a 6-in.-long log. Wrap in waxed paper; freeze 2 hours or until firm., Preheat oven to 350°. Unwrap and cut dough crosswise into 1/2-in. slices, reshaping as needed. Place 2 in. apart on ungreased baking sheets. Bake 10-12 minutes or until golden brown. Cool on pans 5 minutes. Remove to wire racks to cool., Freeze option: Place wrapped logs in a freezer container; return to freezer. To use, unwrap frozen logs and cut into slices. If necessary, let dough stand a few minutes at room temperature before cutting. Prepare and bake as directed.

Steps:

  • In bowl, cream together butter and sugar. Add coconut, milk, walnuts and vanilla; stir until blended. Chill until slightly firm; roll into walnut-sized balls. Insert a toothpick in each ball. Place balls on baking sheets; freeze. In double boiler over simmering water, melt chocolate chips, chocolate squares and paraffin wax. Keep warm over hot water. Using picks as handles, dip frozen balls into chocolate mixture; stick picks upright into was paper-covered Styrofoam sheet. Chill until firm. Remove picks and package candy in individual paper liners. (May also be frozen.)

Coconut Filled Chocolate Cookies Aka Mounds Cookies image

Steps:

  • Sift together flour, cocoa, baking soda and salt; set aside.
  • Cream together butter, sugar, vanilla, egg and sour cream.
  • Stir in dry ingredients.
  • Cover and refrigerate dough.
  • To prepare filling: Combine coconut and milk in a pot over medium heat. Combine cornstarch and sugar; stir into milk. Bring to a simmer and cook, stirring constantly until thickened. Remove from heat and set aside to cool.
  • Preheat the oven to 375 degrees. Grease cookie sheets.
  • On a floured surface, roll dough to 1/8 inch thickness. Cut into 2-1/2 inch circles. Place half of the circles 1-1/2 inches apart on the cookie sheets. Spoon 1 teaspoon filling into center of each circle. Top with another circle of dough and press edges to seal.
  • Bake 8 to 10 minutes. Cool cookies on baking sheet 5 minutes then remove to a wire rack to cool completely. Dust with powdered sugar. Store in a single layer.
  • NOTES:.
  • I had a very hard time with these (sticky dough) and found that using cocoa to roll them out really helped. They are difficult to do, but once you get the hang of it, they go faster and easier. It's all worth it in the end!
  • I had a lot of filling left over, but I did make them smaller (about 2 1/4 inches) and lost some dough due to mishaps. I would suggest using a heaping teaspoon of filling in each one.
