ONION RINGS

Delicately battered onion rings can be made at home without fuss; seltzer, or carbonated water, is the secret ingredient. Fried parsley adds a steakhouse flourish.

Steps:

  • Line a baking sheet with paper towels; set aside. Place onion rings in a large bowl of ice water for 10 minutes; drain and pat dry. In a large bowl, whisk together flour, cornstarch, baking powder, salt, and seltzer.
  • In a heavy 5-quart pot or Dutch oven, heat oil over high until a deep-fry thermometer registers 375 degrees. Working in 7 to 8 batches, place onions in batter; using your fingers, lift out, letting excess drip off. Carefully place in oil, making sure not to overcrowd pot; cook until golden brown, 2 to 3 minutes.
  • Transfer rings to prepared baking sheet, and season with salt. Keep warm in a 250-degree oven. Return oil to 375 degrees before starting next batch.
  • Once all the onion rings are done, place on a platter. Very carefully place parsley in pot (oil will spatter), and fry until crisp, 10 seconds; remove, using a spider or slotted spoon, and season with salt. Sprinkle onions with parsley.

Steps:

  • Put the onions in a large bowl and cover with milk. Let soak for 30 minutes.
  • Meanwhile, using a fine-sieve over a large bowl, sift together the flour, baking powder, 2 teaspoons salt, chili powder, and cumin, if using. Stir in the beer until a smooth batter is formed. Set aside.
  • Drain the onions and transfer to a paper towel-lined baking sheet. Blot the onions with paper towels until dry.
  • In a large, wide heavy-bottomed pot, pour in the oil to a depth of about 2 inches. Place over medium heat and heat to 400 degrees F. (The oil must be heated to 400 degrees F. since the temperature drops oil to about 375 degrees F. when the onions are added.)
  • Working in batches, transfer about 8 to 10 of the onions to the batter and mix to coat well. Using tongs, pull several of the onions out of the batter, and let any excess batter fall back into the bowl. Carefully add to the oil and fry, flipping once, until golden brown and crispy, about 3 1/2 minutes per batch. Using the tongs, transfer to a dry paper towel-lined baking sheet to drain. Sprinkle with salt to taste. Repeat with the remaining onions. Serve immediately.

COFFEE ONION RINGS

These onion rings are extra light and crispy because we carbonate the batter. If you don't have a home carbonation system, you can substitute seltzer water and a tablespoon of freeze-dried coffee. Simple home carbonation systems run the gamut from about $60 for an iSi carbonator to several hundred dollars for a carbonation rig and CO2 tank. Once you start playing with one, you'll wonder how you ever got along without it. The tiny bit of xanthan gum in the recipe helps the batter stick to the onion slices and keeps it from separating. You can season the onion rings with salt and serve with ketchup, but we think you'll find that the Beef Seasoning and smoked ketchup really take the flavor to the next level.

Coffee Onion Rings image

Steps:

  • Pour the coffee into a blender. Turn on low and increase the speed until a vortex forms in the center. Sprinkle in the xanthan gum and increase the speed to evenly disperse it. Reduce the speed to medium and add the flour, egg yolk, salt, and baking soda. Puree to just combine. Pour the mixture into a whipped cream canister and charge with one CO2 charge. Alternatively, if you have a carbonation rig, carbonate the batter to 50 psi.
  • Fill a medium pot half full of canola or rice bran oil and heat over medium-high heat until it reaches 350°F (175°C).
  • Put the flour and onion powder on a plate and mix well. Dispense the coffee batter from the whipped cream canister into a bowl. Dredge the onion rings in the onion flour mixture, dip them into the batter, and immediately drop them in the hot oil. Fry 3 or 4 rings at a time, flipping them once halfway through cooking. When they are golden brown, remove the rings from the pot with a slotted spoon or skimmer and put on a wire rack set over a baking sheet to drain. Season lightly with the beef seasoning and serve with a side of smoked ketchup.

Steps:

  • Heat the oil in a deep-fryer to 365 degrees F (185 degrees C).
  • Separate the onion slices into rings, and set aside. In a small bowl, stir together the flour, baking powder and salt.
  • Dip the onion slices into the flour mixture until they are all coated; set aside. Whisk the egg and milk into the flour mixture using a fork. Dip the floured rings into the batter to coat, then place on a wire rack to drain until the batter stops dripping. The wire rack may be placed over a sheet of aluminum foil for easier clean up. Spread the bread crumbs out on a plate or shallow dish. Place rings one at a time into the crumbs, and scoop the crumbs up over the ring to coat. Give it a hard tap as you remove it from the crumbs. The coating should cling very well. Repeat with remaining rings.
  • Deep fry the rings a few at a time for 2 to 3 minutes, or until golden brown. Remove to paper towels to drain. Season with seasoning salt, and serve.

  • Use a fork to steady your onion. Slice the onion into rings about 1cm wide. Remove the skin and separate the rings.
  • Heat the oil to 180C in a heavy-based pan - it should be no more than 1/ 3 full.
