Coffee Pecan Chews image

Steps:

  • 1. Sift together flour, coffee, and salt. Set aside.
  • 2. Beat eggs until foamy.
  • 3. Gradually add sugar to the eggs and continue beating until stiff.
  • 4. Stir in melted butter and vanilla.
  • 5. Add dry ingredients and mix until well blended.
  • 6. Stir in chopped pecans.
  • 7. Pour into two greased 8 inch square pans. Bake in moderate oven (350 degrees F) 30-35 minutes.
  • 8. **My grandmother noted that butter makes them less chewy and more like a brownie**

1 1/2 c all purpose flour
2 Tbsp instant coffee crystals (i usually use folgers)
1 tsp salt
4 eggs
2 c granulated sugar
1 c melted butter or margarine
2 tsp vanilla

Butter Pecan Chews image

Steps:

  • Heat oven to 375°F. Grease 13x9-inch pan with butter.
  • In medium bowl, mix flour, granulated sugar and butter. Press mixture in bottom of pan. Bake 12 to 14 minutes or until light brown.
  • Meanwhile, in large bowl, beat egg yolks, brown sugar, vanilla and salt with electric mixer. Stir in pecans and coconut. In small bowl, beat egg whites with electric mixer until foamy. Fold into egg yolk mixture.
  • Remove partially baked crust from oven. Spread filling evenly over crust. Reduce oven temperature to 350°F.
  • Bake 25 to 30 minutes or until deep golden brown and center is set. Sprinkle powdered sugar over bars. Cool on cooling rack. Cut into 6 rows by 6 rows.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13 inch pan, or for thinner bars, use a 10x15 inch jellyroll pan.
  • Melt butter in a saucepan over medium heat. Stir in brown sugar until smooth. Remove from heat and let cool slightly.
  • Stir the eggs and vanilla into the brown sugar and butter. Mix in the chopped pecans, and then the flour. Spread evenly in the prepared pan.
  • Bake for 25 minutes in the preheated oven, or until golden brown. Allow to cool before cutting into bars.

This recipe comes from the book "Chocolate Chip Cookie Murder" by Joanne Fluke. I read the book while on vacation this summer & enjoyed it. I want to pass the book on to my swap partner in the Used Media Swap. I'm posting the recipe here even though I have not made the chews yet. I hope to make them soon but, if you make them first, please post a review & let us know how good they are. The author did not indicate how many servings this recipe makes so I guessed. I will update when I know for sure.

Steps:

  • Preheat oven to 350 degrees, rack in middle position.
  • Melt butter and.
  • add brown sugar.
  • Mix well and let cool.
  • Add beaten eggs and mix.
  • Add salt, baking soda, vanilla and nuts.
  • Mix well.
  • Add flour.
  • Mix until flour is thoroughly distributed.
  • Form dough into balls the size of a walnut with shell.
  • Place them on a greased cookie sheet, 12 to a standard sheet.
  • Press them down with a spatula sprayed with Pam (or greased).
  • Bake at 350 degrees for 10-12 minutes.
  • Allow cookies to set up on sheet for one minute.
  • Remove to a wire rack to finish cooling.
  • Eat & enjoy.

  • Spread butter evenly in an ungreased 13-in. x 9-in. baking pan. In a large bowl, beat eggs, brown sugar and vanilla until blended. Steps:

  • Line a 15x10x1-inch baking pan with foil, extending excess over edges of pan.
  • Set pan aside.
  • Butter the sides of a heavy 3-quart saucepan.
  • Melt the 2 cups butter in saucepan.
  • Add sugar, 1/3 cup water, molasses, and 1 tablespoon espresso powder.
  • Cook and stir over medium-high heat until mixture boils.
  • Clip a candy thermometer to side of pan.
  • Reduce heat to medium; continue boiling at a moderate steady rate, stirring frequently, until thermometer registers 290 degree F.
  • ,soft-crack stage (about 25 minutes).
  • Watch carefully after 280 degree F to prevent scorching.
  • Remove saucepan from heat; remove thermometer.
  • Stir in vanilla.
  • Pour candy into the prepared pan.
  • Let candy stand about 1 hour or until firm.
  • Use foil to lift candy out of pan.
  • Break candy into pieces that are about 2 inches in size.
  • Melt the 3 tablespoons butter in a heavy medium saucepan.
  • Stir in the 1 teaspoon espresso powder till dissolved.
  • Add chocolate pieces and melt over low heat, stirring often.
  • Place pecans in a shallow dish or on waxed paper.
  • Dip half of each candy piece into melted chocolate mixture, coating all sides.
  • Place dipped candy on waxed paper.
  • Sprinkle with pecans.
  • Chill until chocolate is firm.
  • Store in a tightly covered container.
  • Makes about 2-3/4 pounds (about 48 piecies).
  • Give a Gift: With old-fashioned chocolate-dipped Coffee-Pecan Toffee.
  • Package the pieces in a cone-shaped paper container.
  • Simply lay squares of parchment paper, textured gold paper, and wire mesh atop one another, then roll and twist into a cone.
  • Tie the outside of the cone with ribbon and secure the candies inside with cellophane.

  • Whisk together flour, allspice, and salt in a small bowl; set aside.
  • Melt molasses and butter in a small saucepan over low heat. Remove from heat; let cool slightly. Stir in bourbon. Transfer to a medium bowl; whisk in sugar until smooth. Stir in flour mixture and 1 cup pecans. Refrigerate dough until firm, at least 1 hour or up to overnight.
