COFFEE WALNUT BREAKFAST MUFFINS
I don't drink coffee, but I love these muffins. They are full of coffee and chocolate flavor, but not too much of either. From the Frog Commissary Cookbook.

Steps:
- Preheat oven to 350.
- Grease and flour 12 muffin pan cups.
- Cream the butter with the sugars, coffee and vanilla.
- Beat together the eggs and milk.
- Combine the flour, salt and baking powder.
- Alternately add the wet and dry ingredients to the butter mixture.
- Stir just to combine.
- Add the chips and nuts.
- Fill the tins full.
- Bake for 20-25 minutes.
- Cool 5 minutes, then remove and cool on racks.

CAPPUCCINO MUFFINS
These are my favorite muffins to serve with a cup of coffee or a tall glass of cold milk. Not only are they great for breakfast, they make a tasty dessert or midnight snack. Steps:
- In a food processor, combine the spread ingredients; cover and process until well blended. Transfer to a small bowl; cover and refrigerate until serving., In a large bowl, combine the flour, sugar, baking powder, cinnamon and salt. In another bowl, combine milk and coffee granules until coffee is dissolved. Add the butter, egg and vanilla. Stir into dry ingredients just until moistened. Fold in chocolate chips., Fill greased or paper-lined muffin cups two-thirds full. Bake at 375° for 17-20 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pans to wire racks. Serve warm with espresso spread.

- In a large bowl, combine the flour, sugars, baking powder, coffee granules, cinnamon and salt. Whisk the egg, milk, butter and vanilla; stir into dry ingredients just until moistened. Fold in chocolate chips. Fill greased or paper-lined muffin cups three-fourths full., For topping, combine the flour, brown sugar and cinnamon in a small bowl. Cut in butter until mixture resembles coarse crumbs. Sprinkle over batter. Bake at 375° for 22-24 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks. Serve warm.

- 1. Heat oven to 350°F Line twelve muffin cups with paper muffin cup liners.
- 2. Beat butter, sugar, brown sugar, coffee and vanilla in large bowl until creamy. Stir together flour, baking powder and salt. Beat together eggs and milk; add alternately with flour mixture to butter mixture, stirring just to combine. Stir in walnuts and chocolate chips. Fill muffin cups 1/2 full with batter.
- 3. Bake 20 to 25 minutes. Cool 5 minutes; remove from pans to wire rack. Cool completely.
