COLORADO MEL'S CARAMEL RUM FONDUE
This is a fantastic dessert fondue recipe! It's perfect for the non-chocoholic in your circle of friends, and SO stinking good that the chocoholics will love it too! :) Whenever we have fondue parties this one is the first one gone. Is also quite delicious cold and makes a wonderful dip for a fruit tray at an evening dessert party. Yummmm!!!!

Steps:
- Put all ingredients into your electric fondue pot.
- Turn heat on to medium setting.
- Stir frequently until completely melted and smooth.
- Turn down to low and just keep warm.
- OR.
- Cook all ingredients together in microwave or on stove top until completely melted and smooth.
- Add to any type fondue pot and keep heated for duration of the party.

- Combine caramels, milk, and cream cheese in a large Dutch oven; cook over low heat, stirring constantly, until caramels melt and mixture is smooth.
- Add additional milk if mixture is too thick for dipping.
- Spoon into fondue pot or chafing dish.

Caramel fondue is easy to make and is fun for a crowd. Roll pieces of caramel coated fruit or poundcake in shaved chocolate, chopped nuts or coconut. Mmmmm.

Steps:
- In medium saucepan, combine the sugar with the corn syrup and water.
- Cook over low heat, stirring occasionally, until the sugar dissolves, about 10 minutes.
- Increase the heat to moderately high and simmer, brushing down the sides of the saucepan occasionally with a wet brush, ntil the syrup starts to turn golden.
- Gently swirl the pan and continue to simmer until a deep amber caramel forms, about 40 minutes total from the time you started.
- Remove the saucepan from the heat.
- Carefullyl stir in the heavy cream, then stir in the butter until melted.
- Return the saucepan to the heat and bring the caramel just to a simmer.
- Remove from the heat and stir in the vanilla.
- Let the caramel cool for 30 minutes, whisking occasionally.
- Pour the caramel into a heatproof serving bowl or fondue pot set over low heat and serve with the cake, fruit and garnishes.
- The caramel can be refrigerated for 1 week.
- Rewarm gently over low heat.

CARAMEL FONDUE FOR FOUR
I bought caramel candies before I looked on racipezaar for a recipe, but when I got home and looked for a recipe, I couldn't find one that called for caramel candies and only served a few people and didn't have lots of other ingredients that I did not have on hand. So this is what I came up with. It was very tasty. It is the right amount for one apple and one banana and some tortilla chips which, believe it or not, are delicious in the caramel sauce as it is like yummy warm caramel corn! I served this with other snack food for four adults and one young child. It seemed to be the right amount. Use caution with your fondue pot, mine sits over a candle and the caramel started to scorch on the bottom.

Steps:
- Remove plastic wrap from caramels.
- Slowly melt caramels with butter and milk in a small sauce pan over med. low heat, stirring often.
- Add a little more milk if it is too thick.
- When melted and mixed well, pour into a small fondue pot to keep warm.
- Serve with sliced fruit and tortilla chips.
- Stir occasionally and watch for scorching as it can become to hot near the heat source.
- ENJOY!

- In a large heavy-bottomed skillet over medium heat, melt sugar for 5 to 10 minutes, stirring occasionally at first, then constantly, until sugar is completely liquefied and browned.
- n the top of a double boiler over hot (not boiling) water, combine the milk, egg yolks and cornstarch-rum mixture. Cook, stirring constantly, for 3 to 5 minutes or until smooth.
- When sugar has caramelized, remove skillet from heat. Carefully stir in boiling water. (Mixture will bubble and spatter.) Immediately pour caramel into warm milk mixture in top of double boiler. Caramel will solidify again, but keep stirring over low heat for about 20 minutes until melted.
