CONFETTI EGG BAKE

Steps:
- Heat oven to 350°. Spray rectangular baking dish, 13x9x2 inches, with cooking spray. Pat hash browns in bottom of baking dish.
- Melt butter in 10-inch skillet over medium heat. Cook onions and mushrooms in butter 5 to 7 minutes, stirring occasionally, until mushrooms are tender. Stir in mixed vegetables.
- Beat eggs, cheese, milk, salt and pepper in large bowl with wire whisk until well mixed. Stir in mushroom mixture. Carefully pour into baking dish.
- Bake uncovered about 40 minutes or until eggs are set in center.

- In a large cast-iron or other ovenproof skillet, saute the potatoes, onion and seasonings in butter and oil over medium heat until vegetables are golden brown and tender, 5-7 minutes. With the back of a spoon, make four wells in the potato mixture; add an egg to each well. Remove from the heat; sprinkle with cheese., Broil 3-4 in. from the heat until eggs are completely set, 3-4 minutes.

This pretty dish has a lot of flavor, and is perfect for brunch. From the Pillsbury Party Cookbook. The original recipe called for "light" ingredients, but we like a lot of flavor, so we use non-light ingredients!

Steps:
- Preheat oven to 350°F.
- Spray 8 inch (1 1/2 quart) square baking dish with non-stick cooking spray.
- Layer Cheddar cheese, spinach, sausage, mushrooms, onions and pimiento in baking dish.
- Mix eggs and half and half until blended.
- Pour egg mixture evenly over ingredients in baking dish.
- Evenly sprinkle Swiss cheese and paprika over dish.
- Bake for 30-40 minutes or until knife inserted comes out clean.
- Let stand 5 minutes before serving.

Steps:
- Heat oven to 350°F (325°F for dark or nonstick pans). Grease bottoms and sides of two 8-inch round cake pans with shortening or cooking spray. Make cake batter as directed on box. Pour into pans.
- Bake as directed on box for 8-inch rounds. Cool 10 minutes; remove from pans to cooling rack. Cool completely, about 1 hour.
- On serving plate, place 1 cake, rounded side down. Spread with frosting. Top with second cake, rounded side up. Frost side and top of cake with remaining frosting. Arrange sprinkles over top of cake. Place candle in top center of cake.

A rich way to eat your vegetables. Also known around here as "creamy veggies." I originally used cream of onion soup but have changed this recipe to say cream of mushroom because the creamy onion soup is so hard to find now, if they even make it anymore.

- Preheat oven to 375 degrees.
- In a large bowl, combine soup, American cheese, mayonnaise, and milk. Mix well.
- Fold in vegetables, pimiento, and mushrooms.
- Turn into 1 1/2 quart baking dish.
- Melt butter in small saucepan.
- Stir in breadcrumbs and Parmesan cheese.
- Sprinkle over casserole.
- Bake uncovered 35-45 minutes until heated through.

- Preheat your oven to 350°F (176°C) and lightly spray an individual sized (~16oz./500 ml) ramekin or oven-safe dish with cooking spray or grease it with cooking oil.
- Combine the oats, almond flour, sugar, arrowroot powder, and baking powder in the baking dish. Add the almond milk and vanilla, and mix until everything is well combined before gently sprinkling the sprinkles on top. You don’t want to mix them in, as the colour will end up bleeding.
- Bake for 25-30 minutes, until the centre has set and the bake has reached your desired consistency.
- Meanwhile, make the frosting by adding the yogurt to a small mixing bowl and continuing to add protein powder until you reach the consistency that you want. Different yogurts and powders will behave differently, so it’s hard to give exact measurements. You really can’t go wrong, though, so just keep tinkering!
