Steps:
- Preheat oven to 350 degrees F (175 degrees C.) In a large bowl, combine flour sugar, salt and baking powder. Cut in shortening until mixture resembles coarse crumbs. Mix egg yolk and water together and mix into flour until it forms a ball. Roll out to fit the bottom of a 10x15 inch pan.
- In a large bowl, combine apples, lemon juice, 2 tablespoons flour, sugar and cinnamon. Pour filling into pie crust and dot with 2 tablespoons butter.
- In a medium bowl, combine 1 cup flour, 1 teaspoon cinnamon, 2/3 cup brown sugar and 2/3 cup butter. Cut in the butter until crumbly, then sprinkle over apples.
- Bake in the preheated oven for 60 minutes, or until topping is golden brown.

APPLE PIE COOKIES
These adorable treats are the ultimate mash-up of crisp linzer cookies and apple hand pies. Each flaky cookie crust holds a dollop of cinnamon-flecked apple filling, creating a dessert that screams fall.

Steps:
- Make the pie dough:
- Pulse sugar, salt, and 2 1/2 cups flour in a food processor to combine. Add butter and pulse until coarse, pea-sized crumbs form, about 10 seconds. With the motor running, add vinegar and 1/4 cup ice water and process until dough just comes together, about 30 seconds. Squeeze a small amount of dough between your fingertips; if it's very crumbly, add more ice water, 1 Tbsp. at a time (2 Tbsp. maximum). Do not overprocess.
- Turn out dough onto a lightly floured surface and form into a rough ball. Knead a few times to combine, then divide into 2 equal balls. Flatten each ball into a disc with smooth edges and no cracks. Cover with plastic wrap and chill at least 1 hour or up to overnight.
- Make the filling:
- Peel, core, and slice apples into 1/4"-thick slices. Coarsely chop slices. Transfer to a large pot and add brown sugar, lemon juice, cinnamon, salt, 2 tsp. flour, and 2 Tbsp. water; stir to combine. Cook over medium heat, stirring occasionally and adding water 1 Tbsp. at a time if bottom starts to brown, until apples are softened but still have a little bite, about 10 minutes. Let cool to room temperature.
- Bake the cookies:
- Preheat oven to 375°F. Line a rimmed baking sheet with parchment paper. Beat egg and milk in a small bowl.
- Roll 1 disc of dough to an 1/8"-thick round about 13" in diameter. Using 3" cutter, cut dough into 12 rounds. Transfer rounds to prepared baking sheet. Spoon 1 heaping Tbsp. filling onto each round (do not overfill). Chill on sheet until ready to use.
- Roll second disc of dough to an 1/8"-thick round about 13" in diameter. Using 3" cutter, cut into 12 more rounds. Using leaf-shaped cutter, cut a hole in center of each round.
- Brush edges of rounds with apple filling with egg wash. Place cut-out rounds over filled rounds to create sandwiches, then press down lightly around edges to seal completely. Gently press down in center to even out filling.
- Brush top of sandwiches with egg wash and sprinkle with demerara sugar, if using.
- Bake cookies until golden brown and crisp on the bottom, 30-35 minutes. Let cool on baking sheet 5 minutes, then transfer to a wire rack and let cool completely.
- Do Ahead
- Cookies can be baked 2 days ahead. Loosely cover with foil and store at room temperature. Do not store in a sealed container or they will become too soft.

- Preheat oven to 400 degrees.
- On a lightly floured baking sheet, roll out pastry into a 15-inch round circle.
- In a bowl, toss together the apples, 3 tbsp sugar, the currants, 1 tbsp flour, 1/2 tsp cinnamon and the peel.
- Pile the mixture in a 9-inch mound, in the middle of the pastry shell.
- Fold the edges neatly over filling, (do not fold to the middle, leave space in the center to add more ingredients).
- Brush the pastry edges with cream or egg.
- Bake on a cookie sheet for 25 minutes.
- Meanwhile, in a bowl, mix 2 tbsp EACH of sugar and flour, the remaining cinnamon with the butter, until crumbly; set aside.
- Whisk in the remaining sugar, the sour cream, egg yolks and vanilla.
- Remove pie from oven.
- Pour the mixture over apples.
- Top with reserved cinnamon-sugar mixture.
- Reduce oven to 350.
- Bake the pie for another 35-40 minutes, or until crust is brown.
- Pour over the apples.

MOM'S FLAT APPLE PIE
This is a great pie for a picinic or potluck. You can pick it up and eat it with your hands. No gooey, drippy mess, but super moist!! The picture that I posted is one of the pictures of the pie my "little" brother made. He is such a great cook as well.

- 1. Mix ingredients for crust (which are the first 4 ingredients on the list).
- 2. Roll out half of the dough to fit a cookie sheet.
- 3. Sprinkle with cornflakes.
- 4. Place sliced apples on top of cornflakes.
- 5. Mix sugar and cinnamon and sprinkle on top of apples and dot with butter.
- 6. Add top crust to cover.
- 7. Beat egg white and sugar and brush on top of pie. Cut a few slits in the top of the pie crust.
- 8. Bake at 425 degrees F for 25-30 mintues.
- 9. Mix powered sugar, vanilla and enough milk to make a thin frosting. Drizzle over hot pie.

- In a large bowl, mix flour and salt; cut in lard until crumbly. Gradually add milk, tossing with a fork until dough holds together when pressed. Divide dough in half. Shape each into a disk; wrap in plastic. Refrigerate 1 hour or overnight., For filling, in a large bowl, mix sugar, cinnamon and ginger. Add apples and toss to coat. Cover; let stand 1 hour to allow apples to release juices, stirring occasionally., Drain apples, reserving syrup. Place syrup and, if desired, bourbon in a small saucepan; bring to a boil. Reduce heat; simmer, uncovered, 20-25 minutes or until mixture thickens slightly and turns a medium amber color. Remove from heat; cool completely., Preheat oven to 400°. - Melt butter in a saucepan over medium heat. Add apples; toss until coated with butter.
