- Cut 2-inch-thick slice from both ends of watermelon; discard trimmed slices. Stand watermelon on cutting board. Starting at top of melon, use long thin sharp knife to carefully cut between rind and fruit all around watermelon to separate rind from fruit. Remove and discard rind.
- Pat melon with paper towels to dry; place on platter. Frost with COOL WHIP.
- Decorate with remaining ingredients to resemble photo.

- Mix 1/3 cup sugar and lime gelatin mix in medium bowl. Add 1 cup boiling water; stir 2 min. until completely dissolved. Add enough ice to 1/2 cup cold water to measure 3/4 cup. Add to lime gelatin; stir until ice is completely melted. Refrigerate 25 min.
- Meanwhile, repeat Step 1 using strawberry gelatin mix and omitting the refrigeration step. Pour into 16 (3-oz.) paper cups. Freeze 20 min. Stir 1/2 tsp. chocolate chips into gelatin in each cup.
- Beat cream cheese and remaining sugar with mixer in medium bowl until well blended. Stir in COOL WHIP; spread over gelatin in cups.
- Pour lime gelatin over cream cheese mixture. Insert wooden pop stick into gelatin in center of each cup. Freeze 3 hours or until firm. Remove pops from cups just before serving.

- In a large bowl, cream butter and sugar until light and fluffy. Beat in egg and extract. In another bowl, whisk flour, baking powder and salt; gradually beat into creamed mixture. Reserve 1 cup dough. , Tint remaining dough red; shape into a 3-1/2-in.-long roll and wrap. Tint 1/3 cup of reserved dough green; wrap. Wrap remaining plain dough. Refrigerate 2 hours or until firm., On a lightly floured surface, roll plain dough into an 8-1/2x3-1/2-in. rectangle. Unwrap red dough and place on a short end of the plain dough; roll up. , Roll green dough into a 10x3-1/2-in. rectangle. Place red and plain roll on a short end of the green dough; roll up. - Line 1 1/2 quart bowl with plastic wrap.
- Mix 1/2 of the cool whip topping with food coloring in another bowl until well blended. spread on bottom and up sides of prepared bowl.
- Freeze 30 minutes or until firm.
- Spread remaining whipped topping over green layer. Freeze 1 hour or until firm.
- Mix sherbert and chopped chocolate in medium bowl. Spoon into center of whipped topping.
- Freeze at least 4 hours or overnight till firm.
- Invert bowl onto serving plate, remove plastic wrap.
- Let stand at room temperature 5 minutes or until dessert can be cut easily.
- Cut into slices.
- Serve immediately.Store leftover dessert in freezer.
