CORN AND BACON FILO TART FROM NEW ZEALAND

Steps:
- Preheat oven to 180°C degree oven.
- Sauté bacon in a small frying pan until bacon is cooked and set aside.
- Spray or brush a 25cm pie dish with a little oil.
- Spray the halved sheets of filo pastry with oil and place in the pie dish overlapping evenly to cover the base and sides of the dish.
- Scatter the cooked bacon and Corn into the filo lined pie dish and sprinkle with the cheese and parsley.
- Beat the eggs and milk together, season well and pour over the corn and bacon.
- Bake for 30-35 minutes until the egg custard is set and top is golden.
- Allow to stand for 5 minutes.before serving.

- Brush each piece of bread with butter. Press into greased deep patty tins.
- Break an egg into each bread case. Top with an even amount of chopped bacon. Sprinkle with a little parsley.
- Bake in a moderate oven 180oC for 15 to 20 mins or until egg is firm.
- Serve warm or cold.
- Store in an airtight container in the fridge for up to 3 days.

A delicious, moist Banana Loaf that is loved in homes all over New Zealand. This recipe is taken from the Edmonds Cook Book. Great to have with a nice cup of tea, or just on it's own. A wonderful healthy dessert for the family. Enjoy.

Steps:
- Sift flour, baking soda and salt into a bowl.
- Mix in sugar.
- In another bowl beat eggs.
- Stir in milk, butter and banana.
- Mix quickly into dry inredients, stirring until ingredients are just combined.
- Spoon into a greased and lined 22cm loaf tin.
- Bake at 180C (350F) for 45-55 minutes.
- Leave in tin for 10 minutes before turning out onto a wire rack.

TAMARILLO AND DATE CHUTNEY (NEW ZEALAND)
This chutney is our favourite and is a great tasty accompaniment to cold cuts of meat such as chicken and beef and is also vert tasty with cheese and crackers especially Brie and Camembert. I compiled this recipe myself with experimenting with tamarillos.

Steps:
- Slice tamarillos in half lengthwise and place in microwave dish and cook for five minutes.
- This enables one to remove skins with ease.
- (Depending on size of dish this will take several lots to microwave the 24 tamarillos).
- Place all ingredients in a large pot or preserving pan and bring to the boil stirring frquently.
- Simmer covered stirring frequently for approximately 2 hours or until thick.
- Pour into hot sterilised jars and cover when cold.

EGG AND BACON TARTS
I was looking for something a little different for lunch box snacks and came across this recipe in a magazine a few years ago. They can be served hot or cold and keep for up to 3 days in the fridge. DD loves to take these to school or as a snack to microwave at dancing. Sometime's I pop a cherry tomato in, or chopped spring onions or cheese on top which is also nice. The options are endless!!! Another idea a friend had, was to use minature muffin pans and she made these for appetiser's at her party !!!

Steps:
- Drain the cooked vegetables well and mix with the cucumber.
- Shake the oil & vinegar together in a screw top jar with salt & pepper, cayenne pepper, minced garlic and green onions and dress the vegetables with this, tossing lightly until all are coated.
- Serve cold.
COFFEE MAPLE WALNUT MUFFINS (NEW ZEALAND)
This comes from "Jo Sealard's New Zealand Country Cooking.". I haven't made it yet. I think instant coffee powder must be something different from the instant coffee we use with hot water to make the beverage because she says nothing about heating up the milk first. US instant coffee granules wouldn't dissolve w/o heating the milk. Therefore, anyone making this needs to find the powder itself or heat the milk somewhat and then let it cool back down so that it doesn't cook other ingredients (I would think).
