DELICIOUS AND EASY CORN ON THE COB
I learned this from a shopper in Stockbridge, Massachusetts when I was young. I have used this for 40 years and it has never failed to produce the most wonderful corn on the cob.

- Bring a large pot of water to a boil. Stir sugar into water to dissolve; add corn, cover pot, and turn heat off, leaving pot on hot burner.
- Steep corn in hot water until tender, about 25 minutes.

MEXICAN CORN ON THE COB (ELOTE)
My Mexican friend gave me this recipe for corn on the cob. Street vendors there sell their corn made this way. Cotija cheese can be found in most grocery stores.

Steps:
- Preheat an outdoor grill for medium-high heat.
- Grill corn until hot and lightly charred all over, 7 to 10 minutes, depending on the temperature of the grill. Roll the ears in melted butter, then spread evenly with mayonnaise. Sprinkle with cotija cheese and serve with a lime wedge.

CORN CON QUESO
I'm not a fan of Emeril's, but I have to say he sometimes has good recipes! This was from his show and it's a fabulous dip for veggies or sturdy crackers or whatever. I make it frequently, it's a great dish to bring if you don't want to bring something that someone else might be bringing, adding more or less heat for individual tastes.

Steps:
- In a medium saucepan, melt butter over medium heat.
- Add onion, corn, salt and cayenne and cook, stirring, until very soft, 5 minutes or so.
- Add garlic and jalapeno, stir to mix, and cook for 1 minute.
- Add cheese and milk and cook gently over low heat, stirring, until cheese melts and mixture is smooth.
- Remove from heat and pour into serving bowl, serve with whatever you would like to dip into it (bread, crackers, veggies, etc).
- Serve immediately.

- Rub corn with the butter mixture. Wrap in foil and put in the oven. Cook for 20 to 25 minutes. Unwrap from foil, top with queso fresco and a squeeze of lime. Serve immediately.
CORN ON THE COB CON QUESO
I was watching the food network and I saw Guy making this. It looks so good and I can't wait to make it this weekend when we grill. I will suggest if you grill it to soak the corn in cold water for about an hour to keep from drying out when you cook it.

- Shuck the corn, and then steam it in a large pot filled with 2 inches of water. It takes about 8-10 minutes for the corn to get tender. Let the corn cool and then slice it off the cob.
- Melt the butter in a saucepan over medium heat. Whisk in the cornstarch, and let cook over the heat for one minute, while whisking. Then whisk in the evaporated milk, and continue to whisk until the milk and cornstarch mixture are well blended. Let the mixture thicken a little.
- Reduce the heat to low. Stir in the cream cheese. Once the cream cheese has been mixed in, add the cheddar and monterey jack a little handful at a time. Wait for each addition of cheese to melt before you add more, this is the way to make sure your queso is nice and smooth.
