- Fill a large saucepan half full with water; bring to a boil. Add corn; cover and cook for 5-7 minutes or until tender. , Meanwhile, in a small saucepan, heat oil and butter over low heat until butter is melted. Stir in the jalapeno, cumin and pepper. Drain corn; brush with butter mixture.

CORN ON THE COB WITH SPICY LIME BUTTER
There's nothing to grilling corn on the cob--just put the unhusked ears over the coals and grill them until the husks are charred. The moisture in the husks and silks will create steam to cook the kernels, so there's no need to soak the corn in water first. As the grilling itself is so simple, you'll have extra time to whip up a special butter for slathering onto the hot corn. From the Kingsford Complete Grilling Cookbook.

- To make the butter, mash the butter, lime zest, and chile in a small bowl with a rubber spatula until combined. Season with salt to taste. Transfer the butter to a serving bowl and set aside at room temperature. Place the corn on the grill and cover. Grill, turning occasionally, until the husks are charred on all sides, about 20 minutes. Transfer the corn to a platter. Using a clean kitchen towel to protect your hands, strip off the husks and silks. Serve hot, with the butter passed on the side.

CHILI LIME CORN ON THE COB
Steps:
- In a small bowl, combine butter, lime zest and juice, chili powder, garlic and salt and pepper and set aside.
- Carefully peel back husk from the ear, without detaching from the bottom, remove silk from corn, fold the husk back around the ears and soak in water for 30 to 45 minutes. Make sure to weigh down the ears so that they are fully submerged.
- Preheat a grill to medium, indirect heat. Remove ears from water, drain, open husk, dry ears with paper towel and spread butter mixture evenly on corn. Fold husk back over corn and grill, turning often, for 35 minutes (change heat to medium-high for the last ten minutes of grilling). Serve immediately.
ROASTED CORN ON THE COB WITH CILANTRO LIME BUTTER
Steps:
- Preheat oven to 400 degrees F.
- Coat each ear of corn in 2 tablespoons of the cilantro lime butter and wrap individually in foil. Roast until hot and steaming, about 25 minutes. Serve with extra butter on the side.
- Put the butter in a mixing bowl and, using a rubber spatula, mix in the cilantro, lime zest, lime juice, salt and cayenne. Use immediately or refrigerate.
CORN ON THE COB WITH SPICY CILANTRO BUTTER

- Preheat a grill or grill pan to medium high. Mix the butter with the cilantro, lime zest, jalapeno, 1/2 teaspoon salt and a few grinds of pepper in a small bowl until combined; set aside.
- Grill the corn, turning occasionally, until lightly charred and tender, 10 to 15 minutes. Remove to a platter and smear with the cilantro butter. Squeeze the lime wedges on top.
- We husked the corn before grilling to give the kernels a charred flavor. If you want to leave the husks on, grill 3 to 4 more minutes.
CORN WITH SPICY LIME BUTTER
This is a side dish which is great to grill in the summer, when fresh corn on the cob is readily available. The times listed below do not include the 1-hour soaking time.

- Carefully peel back corn husks but do not remove. Remove and discard the corn silk. Gently rinse the ears of corn. Pull the husks back up around the corn. Using 100% cotton kitchen string, tie the husks shut. Soak corn in enough water to cover for about 1 to 2 hours. Drain corn.
- To prepare the lime butter, in a medium bowl beat together softened butter, lime peel, lime juice, salt, pepper and hot pepper sauce.
- For a charcoal grill, grill drained corn on the rack of an uncovered grill directly over medium coals for 25 to 30 minutes or until the kernels are tender, turning once. (For a gas grill, preheat grill. Reduce heat to medium. Place drained corn on grill rack over heat. Cover and grill as above.) (For oven roasting, place drained corn on oven rack. Roast in a 400°F oven for 25 to 30 minutes or until the kernels are tender.).
- To serve, remove corn from grill or oven. Let stand for 5 minutes. Remove the strings from the corn; peel back husks. Serve immediately with the spicy lime butter.

GRILLED CORN ON THE COB WITH CHILI-LIME BUTTER AND COTIJA CHEESE
Steps:
- Heat a grill to medium-high heat. Grill the corn in their husks until the husks start to blacken, about 3 minutes per side.
- Mix together the butter, chili powder, cayenne pepper, lime juice and some salt and black pepper in a bowl until incorporated.
- Peel back the corn husks, leaving on to use as handles while eating. Rub the chili-lime butter all over the corn. Garnish with the cotija cheese.
GRILLED CORN ON THE COB WITH LIME BUTTER

- Soak the corn in a large container of water for 1 hour. Prepare the grill. Put the soaked cobs on the hot grill and cook for 30 to 40 minutes, turning frequently. The corn is done when it feels soft when you press on it.
- While the corn is grilling make the lime butter: In a small bowl add the butter, lime zest, chervil, and salt and pepper, to taste. Mix well and spread onto a large plate. Spread the queso fresco onto another plate.
- Take the corn off the grill and carefully peel back the husks (it will be hot). Remove the corn silk and tie the husks in a knot so you can hold on to it like a handle. Roll in the lime butter and then roll in the queso fresco; sprinkle with the Ancho Chile Rub. Place on a large platter and serve immediately.
- For the spice rub: Toast the ancho chile pieces over low heat in a dry skillet until fragrant, shaking the pan so they don't scorch. Put the chiles in spice grinder and pulse to a powder. Add the remaining ingredients and buzz again to combine.

- To boil corn: Bring large pot of water to boil; add pinch of sugar, if desired. Husk corn. Add corn to pot. Return water to boil and cook corn 4 minutes. Drain corn and serve immediately with lime-chive butter.
- To grill corn: Prepare barbecue (medium-high heat). Remove all but the innermost husks from corn. Fold back inner husks and remove corn silk. Rewrap inner husks around corn. Grill until husks are slightly charred and corn is tender, turning often, about 10 minutes. Serve immediately with lime-chive butter.

- Carefully pull the husks back from the corn cobs. Remove the silks then tie back the husks using one piece of the husk as a rope. (You can remove the husk completely if you like. I just think it is really pretty when they’re left on.)
- Coat the corn in the oil and place it on the grill so that most of the husk is out of the BBQ. You can use the husk to easily turn the corn. Cook the corn for 10 minutes, turning it every few minutes so that it cooks on all sides.
