Steps:
- Heat oven to 400°F. In food processor, place flour and butter. Cover; process until mixture looks like coarse meal. Add cheese and red pepper. Cover; process, using quick on-and-off motions, until combined. With food processor running, gradually pour water through feed tube; process just until dough forms a ball.
- Onto ungreased cookie sheets, drop dough by tablespoonfuls 2 inches apart. Flatten each cookie with bottom of drinking glass; gently press 1 pecan half into center of each cookie.
- Bake 12 minutes. Cool 2 minutes; remove from cookie sheets to cooling racks. Store cooled cookies tightly covered.

- Put spices and butter in a pot.
- Stir while heating until it starts to bubble.
- Reduce heat.
- Stir in flour.
- Remove from pot and place in mixing bowl.
- Mix in cheese.
- Roll into log (refrigerate if necessary).
- Use cheese cutter to cut into medallions.
- Bake at 400 for 20 minutes.
- Remove from cookie sheet.
- Cool.
- Serve with Tabasco sauce.

A really nice change from all the sweet cookies out there. Can be used as a appetizer too. They need to chill for 1 hour before baking. I used to have a co-worker who I HAD to make these for every year at our Christmas party.

- Mix all ingredients together with your hand.
- Make teaspoon size balls.
- Place 2 inches apart on ungreased cookies sheet.
- Refrigerate 1 hour.
- Bake at 400°F 15-20 minutes until set.

Guests will be surprised to find that these appetizers, studded with nuts and bejeweled with pepper jelly are not to be saved for dessert. This is one cookie recipe that should certainly be paired with cocktails.

Steps:
- In food processor, pulse together Cheddar and Parmesan cheeses and butter until smooth.
- Add egg yolk and pepper; pulse until blended.
- Add flour; pulse just until soft dough forms.
- Place pecans on plate.
- Place 1 cup water in bowl.
- With hands, roll scant tablespoonfuls of dough into 1-inch balls.
- Wet balls with water; roll in nuts to coat pressing nuts lightly into dough ball.
- Place on ungreased baking sheet.
- With thumb or finger, make indentation in center of each.
- Refrigerate for 15 minutes.
- Bake in center of 350°F oven for about 15 minutes or until firm outside and lightly golden.
- Let cool on baking sheet.
- (Can be prepared to this point and frozen in layers separated by waxed paper in rigid airtight container for up to 2 weeks. Bake in 350°F oven for about 3 minutes to recrisp).
- Fill indentations with hot pepper jelly.

- Combine Flour and butter in a large bowl using a pastry cutter or 2 knives or your fingers until mixture resembles coarse crumbs.
- Add the rest of the ingredients and mix until blended.
- Shape dough into 3/4 inch or 1 inch balls and place 2 inches apart on an ungreased cookie sheet.
- Flatten slightly with a fork.
- Bake for 15 to 17 minutes or until golden brown.
