CORNED BEEF AND CABBAGE I

What's more Irish than a traditional recipe for corned beef and cabbage? Serve with mustard or horseradish if desired.

Steps:

  • Place corned beef in large pot or Dutch oven and cover with water. Add the spice packet that came with the corned beef. Cover pot and bring to a boil, then reduce to a simmer. Simmer approximately 50 minutes per pound or until tender.
  • Add whole potatoes and carrots, and cook until the vegetables are almost tender. Add cabbage and cook for 15 more minutes. Remove meat and let rest 15 minutes.
  • Place vegetables in a bowl and cover. Add as much broth (cooking liquid reserved in the Dutch oven or large pot) as you want. Slice meat across the grain.

Steps:

  • Place corned beef in crockpot.
  • Sprinkle tapioca evenly over meat.
  • Spread carrots, onions and cabbage evenly around and over meat.
  • In a mixing bowl, combine remainder of ingredients.
  • Pour over meat and veges.
  • Cook on low for 6-8 hours.
  • Remove cloves and bay leaf before serving.

  • Spray 6- to 7-quart slow cooker with cooking spray. In 12-inch nonstick skillet, heat oil over medium-high heat. Cook onions and garlic in oil 4 to 5 minutes, stirring occasionally, until softened. Add cabbage; cook 2 to 3 minutes until slightly wilted. Spoon mixture into slow cooker.
  • Add potatoes, broth, water, bay leaves, 1/3 cup parsley and the pepper to slow cooker; stir. Top with corned beef; sprinkle with contents of spice packet. Cover; cook on Low heat setting 6 hours.
  • Remove beef from slow cooker. Discard bay leaves. Chop beef, discarding fat. Return beef to slow cooker; stir. Serve with horseradish sauce.

Slice the potatoes and the corned beef and then add to the pot along with the broth, worcestershire and pepper. Bring to a boil and then reduce to a simmer for about 10-15 minutes, until the potatoes are tender.
  • While the stew is simmering, slice the cabbage. When the potatoes are tender, add the cabbage and stir for about a minute to soften it slightly. Remove from the heat and serve. Enjoy!
