CREAM CHEESE CRAB SPREAD WITH HOMEMADE CROSTINI

Steps:
- Combine the cream cheese and all but 1/2 cup of the crabmeat in a medium bowl. Mix until thoroughly combined. Roll into an 8-inch log and refrigerate until firmed up slightly, about 1 hour. Refrigerate the remaining 1/2 cup crabmeat until serving.
- Meanwhile, combine the ketchup, horseradish, lemon juice, salt and some pepper in a medium bowl. Taste and adjust to your liking.
- Place the log on a serving platter. Spoon some of the sauce over it, reserving the remaining sauce in a small bowl to serve on the side. Sprinkle the reserved 1/2 cup crabmeat on top and garnish with the chives. Rub the garlic onto one side of each slice of bread and arrange the bread on the serving platter.
CHEESY BAKED TORTELLINI

- Preheat the oven to 350 degrees F. Lightly oil an 8 by 8 by 2-inch baking dish.
- Whisk the sauce, mascarpone cheese, parsley and thyme in a large bowl to blend. Cook the tortellini in a large pot of boiling salted water until just tender, about 2 minutes. Drain. Add the tortellini to the sauce and toss to coat. Transfer the tortellini mixture to the prepared baking dish. Top the mixture with the smoked mozzarella and Parmesan. Cover and bake until the sauce bubbles and the cheeses on top melt, about 30 minutes.
SEAFOOD AND TORTELLINI IN CREAM SAUCE
I was just looking for something to do with the seafood I had in my freezer, I found a bag of tortellini in there too and we were in business. Just kinda made this one up from stuff I had in the kitchen one day. We decided it was worth making again.

- 1. Cook tortellini according to package directions, drain and set aside. Meanwhile, melt half of the butter in pan and cook shrimp and diced onion, just until onions are tender and shrimp is pink. Remove shrimp & onions to a warm plate, reserving pan drippings.
- 2. Add more butter to pan, melt and add flour whisking until well blended with butter. Gradually pour in milk, whisking constantly. Add parmesan cheese, salt & pepper. Stir over medium heat until thick and bubbly.
- 3. Combine all ingredients in a pan except the colby-jack cheese. Mix thoroughly.
- 4. Sprinkle with colby jack and heat just until the cheese is melted. Serve with crusty garlic bread.

- Preheat the oven to 400 degrees F (200 degrees C).
- Fill a large pot with lightly salted water and bring to a rolling boil; stir in tortellini and return to a boil. Cook uncovered, stirring occasionally, until the tortellini float to the top and the filling is hot, 3 to 5 minutes. Drain and place into a 9-inch baking pan.
- Heat canola oil in a large saucepan over medium heat. Add mushrooms and cook until golden brown, 12 to 15 minutes. Stir butter into the pan until melted; stir in flour slowly and cook until golden, about 1 minute. Pour milk slowly into the saucepan, stirring continuously. Reduce heat to medium-low and cook until sauce begins to bubble, 7 to 8 minutes.
- Remove saucepan from heat. Season with salt and pepper. Stir in Parmesan cheese. Pour sauce over cooked tortellini in the baking pan.
- Bake in the preheated oven until sauce begins to brown, 20 to 25 minutes. Serve immediately.

CRAB TORTELLINI
DELICIOUS! This is a great recipe to serve when you are having guests and want to impress them. For a faster, easier recipe, you can use canned crabmeat instead of live crabs. My family thinks it is just as good and it makes it a lot easier for me!

- 1. TORTELLINI FILLING DIRECTIONS: 1. Pick out crab meat being sure to check for and remove any shells or cartilage. 2. Squeeze extra moisture out of the crab meat. 3. Combine with chopped basil, chopped chives, and Morscorpone Cheese in a mixing bowl. 4. Season with salt and pepper and set aside in the refrigerator.
- 2. PASTA DIRECTIONS: 1. In a food processor, add flour and salt and start the machine. 2. Slowly add the olive oil, 3. Then add the eggs one at a time. Make sure the eggs are totally mixed in. 4. Kneed on a countertop until the dough is smooth, wrap in plastic and refrigerate for one hour. 5. Using a pasta machine, roll the dough to the zero "0" setting and smooth. (If you don't have a pasta machine, just use a rolling pin and roll the dough out as thin as you can get it.) 6. Using a large circle dough cutter, cut the pasta into 2" or 2 1/2" circles. 7. Place about a teaspoon of the crab mixture in the center of the circle. 8. Brush 1/2 of the outside edge of the circle with the whisked egg. 9. Fold in half to form a half moon shape, push out any air, and then press edges together and seal with egg. 10. Next, wrap the two corners around your finger and turn. (See photo at left) 11. Press ends together to seal shape. (After you do a few, you will get much quicker with putting them together.) 12. Boil in salted water for 3 minutes. (Make sure water is boiling before adding the pasta and don't overcook.)
- 3. VINAIGRETTE DIRECTIONS: 1. Mix all ingredients together in a mixing bowl. 2. Season with salt and pepper.
- 4. FINISHING DIRECTIONS: 1. Shred Bok Choy and sauté with olive oil and season with salt and pepper. 2. Arrange the vinaigrette on the bottom of the plate. 3. Place some of the Bok Choy mixture on top. 4. Place tortellini on the top 5. Garnish with basil.
