BAKED GOAT CHEESE DIP

- Preheat the oven to 400 degrees F. Combine the goat cheese, cream cheese, parmesan and 2 tablespoons olive oil in a food processor and season with pepper; puree until smooth. Brush a 1-quart baking dish with olive oil, then spread the cheese mixture in the dish, mounding it slightly higher around the edge than in the middle. Bake until golden and heated through, about 15 minutes.
- Meanwhile, combine the tomatoes, chives, vinegar, garlic, the remaining 2 tablespoons olive oil and 1/2 teaspoon salt in a medium bowl. Spoon the tomato mixture on top of the dip. Serve with baguette slices.
CREAMY GOAT CHEESE, BACON AND DATE DIP
This appetizer is like a bacon-wrapped date in dip form - and every bit as luxe, sweet and simultaneously smoky as that sounds. Here, as you swipe crusty bread through the smooth cheese, you'll gather chunks of bacon and a bit of date, toffee-like from a quick fry in the meaty fat. You could embellish further, with nuts, chile or honey, or you could sip Champagne and dig in just as merrily - with friends hovering nearby for their turn.

- Heat oven to 400 degrees. In a medium bowl, stir together the goat cheese, cream cheese, lemon juice and a pinch each of salt and pepper. Transfer to a 1-quart baking dish or ovenproof skillet, and spread into an even layer. Bake until warmed through and bubbling, about 20 to 25 minutes.
- Meanwhile, cook the bacon in a medium skillet over medium-low heat, stirring occasionally, until golden and crisp, about 10 minutes. Using a slotted spoon, transfer the bacon to a paper towel-lined plate, then add the dates to the bacon fat in the skillet, and cook, stirring occasionally, until the insides are warm and the outsides blister, about 1 minute.
- Top the baked cheese with the dates and bacon, and garnish as you wish. Serve at once.

SPICED GOAT'S CHEESE DIP

- Put the seeds and nuts in a frying pan, then gently heat to toast them, removing them from the heat when the seeds start to pop and give off their aroma. Grind fairly coarsely using a pestle and mortar, then season with a little salt.
- Beat the goat's cheese with the milk to soften it, then add a little seasoning if needed. Tip half into a small bowl (glass, if you have one, to show off the layers) and scatter with half the seeds and a few torn mint leaves. Repeat the layer and serve with a bowl of cold radishes and toasted pittas or bread.

SOUTHERN MEDITERRANEAN GOAT CHEESE SPREAD OR DIP
This is my own creation inspired by, if not entirely true to, the cuisines of the Southern Mediterranean which I love. Use it as a dip, spread it on any type of toasted bread. I've used it on grilled steak to good advantage. You'll get 16 servings of 1 Tbsp each.

- In a medium bowl crumble goat cheese. Meanwhile in a small chilled bowl, whip cream until thickened only and stir into goat cheese.
- Stir in herbs, shallot, lemon peel, and garlic. Season to taste with sea salt and pepper. Thin with additional cream, if desired. Serve on toasted pita wedges, Syrian bread or anything you wish.
- * 1/4 cup in total. Mix the herb amounts to your preference but you might want to make the parsley the main herb with smaller amounts of the remaining 3.
MEDITERRANEAN GOAT CHEESE SPREAD (WW)
Sun-dried tomatoes are a favorite of ours, so this dip was a must. You can buy herb-flavored goat cheese and experiment with different flavors. NOTE: Gently fold the olives and tomatoes into the cheese mixture; over-mixing may turn the spread an unappetizing purplish pink color. From "WW 5-Ingredient-15 Minute Recipes" and = 1 point. Served on 1 melba toast round = 2 points.

- Combine tomatoes and water in a microwave-safe bowl. Microwave on HIGH one (1) minute or until water boils. Remove from microwave;' cover with plastic wrap and let stand 10 minutes to soften.
- Meanwhile, place cheese in a microwave-safe bowl; microwave on HIGH 15 seconds or until soft. Add sour cream and salt; stir until well blended. Fold in olives.
- Drain tomatoes; finely chop, and fold gently into goat cheese mixture.
- Serve immediately, or cover and chill until ready to serve.

MARINATED GOAT CHEESE SPREAD / DIP
A decedent spread that wins raves at potlucks and dinner parties. Rich and flavourful, it's perfect served with whole grain crackers or grilled bread. Thanks to my co-worker Melanie for the AWESOME recipe! Note that 1/2 cup of pesto can be substituted for the fresh herbs - it saves time and waste if you don't have a use for the rest of the herbs!

- Arrange cheese in a shallow dish in a single layer. Scatter olives, sundried tomatoes and basil over and around it.
- In a small bowl, combine vinegar, oil, garlic, rosemary, thyme, and pepper. Pour over cheese.

- Preheat oven to 350°F. Combine cream cheese, goat cheese, salt, black pepper, and garlic in a food processor. Process until smooth, about 1 minute, stopping to scrape down sides as needed. Transfer mixture to a medium bowl, and stir in 1/4 cup chives.
- Spoon mixture evenly into a shallow 1 1/2-quart baking dish. Bake in preheated oven until heated through, 15 to 18 minutes. Place pepper jelly in a medium bowl, and whisk vigorously to loosen. Spread pepper jelly over hot dip; garnish with additional chives. Serve immediately with crudités and bread.
