Steps:
- In a small saucepan, combine vinegar and honey. Bring to a boil. Reduce heat; simmer, uncovered, until mixture is reduced by half, about 5 minutes. Set aside to cool., Lightly brush both sides of baguette slices with oil; place on an ungreased baking sheet. Broil 3-4 in. from the heat 1-2 minutes on each side or until golden brown. Set aside., In a small bowl, combine the topping ingredients; toss to coat. In another bowl, beat goat cheese, lemon zest and pepper until blended., To serve, spread goat cheese mixture over toasts. Stir cranberry mixture; spoon over goat cheese. Drizzle with balsamic glaze and sprinkle with mint.

- Make the cranberry Sauce: Rinse the cranberries and toss any yucky mushy ones. Add cranberries, maple syrup, water, orange zest and juice, cinnamon and nutmeg to a large pot. Stir frequently and cook over medium heat for 10 minutes or until the cranberries have popped and it looks like a sauce.
- Toast the bread: While the cranberry sauce is cooking slice the bread into 1/2 inch thick slices. You should end up with 20-24 slices. Arrange them in a single layer on a baking sheet and pop them in the oven for 5 minutes or until they are slightly golden brown.
- Assemble the crostini: Top each slice of toasted bread with a generous spread of goat cheese, then spread on a nice dollop of cranberry sauce. Garnish it with a light sprinkle of lemon zest and fresh thyme. Then just serve them up and enjoy!

- Add cranberries, sugar, orange juice and ¼ cup water to small pot. Stir, cover and bring to a boil. Uncover, reduce heat to simmer, and cook (stirring occasionally) ~12 minutes or until cranberries are audibly and visually "popping" and sauce is thickened.
- If sauce is too thick, add water 2 Tbsp at a time until desired thickness (note: sauce will continue to thicken as it cools).
- Add salt to taste (careful it's hot!). Garnish with desired amount of fresh orange zest. Serve hot or cold. It will be easier to make the crostini's if it's cold (and also thicker). Happy Eating! Beckie
