Steps:

  • Over medium high heat, heat olive oil in heavy skillet. Add mushrooms and cook until brown. Add onion, garlic and bell pepper cook stirring occasionally until wilted.
  • Stir in saffron, basil, oregano and red chili flakes, cook 1 minute. Add diced zucchini and cook until zucchini begins to wilt. Stir in sauce and bring to a boil over medium high heat. Reduce heat to low, stir in clams and diced olives. Cook until heated through.
  • Serve over hot linguine and sprinkle with cheese.

Clear Clam Sauce and Pasta image

Steps:

  • Start cooking pasta according to package instructions.
  • While pasta is cooking put olive oil, crushed garlic and red pepper in sauce pan and cook on med-low until garlic just starts to turn golden.
  • Then add the italian seasoning and cook 30 seconds more.
  • Add clams and their juice and 1/2 cup boiling pasta water from the pasta pot and simmer for 1 minute then take it off the heat.
  • Drain pasta and put it back it the pot you cooked it in and pour clam sauce over the top.
  • Put back on low heat and let simmer for a minute.
  • Plate up and sprinkle with parmesan cheese and pine nuts.
  • Great with parmesan roasted tomato slices and crusty french bread!

Saffron Sauce image

Steps:

  • Melt clarified butter in a pan and add the onion.
  • When onion turns translucent add garlic and stir.
  • Add white wine and let simmer.
  • Keep one TB cream back, add the rest to the pan. Let reduce sauce until desired consistency is reached.
  • Dissolve the saffron threads in the remaining TB of cream and add to the sauce.
  • Salt and pepper to taste.
  • Serve.

  • In a large skillet, sauté the onion and garlic in olive oil until the onions are translucent. Add the butter, stir until melted. Add the peppers and herbs, simmer for about 5 minutes.
  • While the peppers and herbs are simmering start cooking the linguini according to the package.
  • Drain the cans of minced clams, reserving half of the juice.
  • Stir in the clams, reserved juice, salt and pepper, and wine into the large skillet with the peppers and herbs. Simmer the mixture for 25 minutes, until the sauce has reduced 1/3 and has thickened.
  • You want to spoon the clam sauce over the linguine as soon as the linguine is done and serve.

  • In a large frying pan over medium heat, heat olive oil.
  • Add chopped garlic and saute gently until just golden, about 1 to 2 minutes: DO NOT BROWN.
  • Add clams including liquid, cayenne, oregano and lemon juice and simmer for 2 to 3 minutes.
  • Add chopped parsley and continue to simmer for 1 minute longer.

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until 2 minutes short of al dente (it will finish cooking in the sauce). Reserve 1/2 cup pasta water, then drain pasta.
  • While the pasta cooks, make your sauce: Heat the oil in a deep-sided 12-inch skillet over medium. Add the garlic, red-pepper flakes and oregano and cook until the garlic is pale golden, 1 to 2 minutes. Add the vermouth and simmer until reduced by half, 3 to 4 minutes. Steps:

  • Place the tomatoes, along with any liquid, in a saucepan, bring them to a simmer and allow them to cook about 10 minutes, until they release their juice. Strain the hot juice into a bowl, reserving the tomato pulp. Stir the saffron into the juice and allow to steep while continuing with the recipe. If using canned tomatoes, chop the pulp.
  • Heat two tablespoons of the oil in a large, heavy casserole. Add the sausages and saute until they are lightly browned. Remove the sausages from the pan and reserve.
  • Add the onion, red pepper and garlic to the pan and saute until they are soft but not brown. Stir in the oregano, the tomato liquid with the saffron, the tomato pulp, sausages and clams. Steps:

  • Bring a large pot of salted water to a boil over high heat. Cook the pasta according to package directions until 3 minutes shy of al dente. (It will finish cooking in the sauce; pasta should be toothsome but not crunchy.) Reserve 1 cup of the pasta cooking water, then drain pasta.
  • Meanwhile, once pasta is cooking, in a large skillet, heat oil over medium. Add tomatoes, season with salt and pepper, and cook, stirring occasionally, until they soften and start to pop, about 5 minutes. Stir in garlic until fragrant, about 1 minute.

Steps:

  • Heat the oven to 450 degrees. Smash and peel 8 garlic cloves; peel and finely chop the remaining 6. Toss the smashed garlic with the tomatoes, 2 tablespoons of oil, fine sea salt, and 1/4 teaspoon black pepper. Spread the tomatoes out in a layer in one or two baking pans (make sure they aren't too crowded, so they don't steam) and roast tomatoes, tossing occasionally, until bursting, 15 to 20 minutes.
