This incorporates all the flavors of lasagna, but it's easier because the ingredients are simply mixed together and baked.

- Preheat the oven to 350 degrees F (175 degrees C).
- Fill a large pot with lightly salted water and bring to a rapid boil. Cook egg noodles at a boil until tender yet firm to the bite, 7 to 9 minutes. Drain.
- Heat a large skillet over medium-high heat. Cook and stir ground beef and sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Pour marinara sauce into the meat. Stir in drained egg noodles, 2 tablespoons Parmesan cheese, onion powder, garlic salt, and Italian seasoning; mix until incorporated. Pour mixture into an 8-inch square casserole dish and top with mozzarella cheese and remaining Parmesan.
- Bake in the preheated oven until cheese is golden brown, about 25 minutes.

CRAZY LASAGNA

- In a 3-quart saucepan, heat the olive oil over medium heat. Add the onion and cook until soft and light golden brown, about 7 to 8 minutes. Add the garlic, fennel seeds and peperoncino and stir to combine. Add the sausage, beef, tomato paste, canned tomatoes, and red wine. Bring the sauce to boil. Lower the heat and let the sauce simmer for about 30 minutes before removing the pan from the heat. Salt, to taste. In a bowl, combine the ricotta with 1/2 cup extra-virgin olive oil, chopped parsley and black pepper. Set aside. Bring 6 quarts of water to a boil. Season with 2 tablespoons salt. Cook the lasagne noodles according to the directions on the package, boiling them until they are tender but still al dente. Drain. Toss the cooked noodles in the meat ragu with the cacciacavallo cheese, ricotta mixture, and fennel fronds. Garnish with Pecorino.

- Arrange tomatoes, eggplant, zucchini, mushrooms, peppers and onions on large roasting pan. Drizzle with olive oil and sprinkle with salt and pepper. Cut top quarter of garlic heads and wrap garlic in foil.
- Roast vegetables and garlic at 400 oven for 45 minutes, or until browned. Note: the garlic might be done before the vegetables, so don't let it get overcooked.
- Cook pasta in boiling water until tender. Drain and rise with cold water.
- In a large bowl, combine noodles with roasted vegetables. Squeeze in garlic,. Add pureed tomatoes, ricotta, basil, oregano and mozzarella. Taste and adjust seasonings.
- Transfer mixture to a 13 x 9 baking dish (or 2 8 x 8 dishes) and sprinkle with Parmesan. Cover and bake in preheated 350 oven for 30 minutes. Uncover and cook for 20 - 30 minutes longer, or until lightly browned. Allow to rest for 10 minutes before serving.

- In a large saucepan, cook the sausage, beef, onion, carrot and pepper flakes over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. , Add the tomatoes, tomato paste, sugar, oregano, basil, salt and 1/2 teaspoon pepper; bring to a boil. Reduce heat; simmer, uncovered, for 45 minutes or until thick, stirring occasionally. , In a small bowl, combine the ricotta, 1/2 cup Parmesan cheese, egg, parsley and remaining pepper. , In a greased 13x9-in. baking dish, layer a fourth of the noodles, a third of the ricotta mixture, a fourth of the meat sauce and 1/2 cup mozzarella cheese. Repeat layers twice. Top with the remaining noodles, sauce and Parmesan cheese. , Cover and bake at 400° for 45 minutes. Sprinkle with remaining mozzarella; bake, uncovered, 10 minutes longer or until a thermometer reads 160°. Let stand 15 minutes before serving.

Steps:
- Bring a large pot of lightly salted water to a boil. Cook noodles in boiling water for 8 to 10 minutes, or until al dente; drain.
- In a large skillet over medium heat, saute ground beef, onions, salt and garlic salt until meat is brown. Drain excess fat, add spaghetti sauce to beef mixture, and bring to a boil. Reduce heat, and simmer for 15 to 20 minutes.
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch glass baking pan.
- Line bottom of pan with three lasagna noodles. Spread 1/3 of sauce mixture over noodles. Layer 1/3 of the cottage cheese over the sauce. Sprinkle 1/3 of the mozzarella over the cottage cheese. Repeat this layering process until all ingredients are used up.
- Bake in the preheated oven for one hour. Let stand for 10 minutes before serving.
