Steps:
- Preheat oven to 375 degrees F (190 degrees C). Grease a 9-inch pie plate.
- Fill pie plate with apples, creating a slight mound.
- Combine flour, oats, brown sugar, cinnamon, and nutmeg in a large bowl. Cut in butter with a pastry blender or knife and fork until mixture is crumbly. Sprinkle over apples.
- Bake in the preheated oven until apples are tender and bubbling and top is lightly golden brown, 45 to 55 minutes. Let cool before slicing, about 15 minutes.

- Lightly spray a slow cooker with cooking spray.
- Combine the almond milk, water, pumpkin puree, maple syrup, cinnamon, and salt in the slow cooker. Whisk to combine thoroughly. Add oats, dried cranberries, and butter.

- In a large bowl, whisk oats, flour, brown sugar, baking powder, pie spice and salt. In a small bowl, whisk eggs, 1 cup milk and vanilla until blended. Add to oat mixture, stirring just until moistened. Fold in apples., Transfer to a greased 3-qt. slow cooker. Cook, covered, on low until apples are tender and top is set, 4-5 hours., Stir in remaining milk. Serve warm or cold, with ice cream if desired.

CHEWY APPLE OATMEAL COOKIES
I had "inherited" bags and bags of apples and was trying to use them up and found this recipe in the August/September 2006 Taste of Home magazine that was chock full of other apple recipes. In the second batch, I added walnuts which were also a very nice addition. Even though the recipe calls for dried apples, don't let that make you hesitate in making these. I used chopped apples - 1 cup - and they were delicious! Also, be sure to flatten these a bit on the cookie sheet, they do not spread out while baking.

- In a large mixing bowl, cream butter and sugars.
- Beat in eggs and vanilla.
- Combine the flour, cinnamon and baking soda.
- Gradually add to creamed mixture and mix well.
- Fold in oat and apples.
- Drop by rounded tablespoons 2 inches apart onto ungreased baking sheets. Bake at 350°F for 10-12 minutes. Let stand for 1 minute before removing to wire racks.
CREAMY APPLE AND OAT PUREE
Steps:
- 1. Put the apples in a saucepan with the water. Bring to a boil, then reduce the heat, cover, and cook very gently until soft, 10 to 15 minutes. 2. Add the cinnamon, if using, and puree in a blender, or mash until smooth. Sweeten with the agave nectar, if using. Cool the applesauce and keep refrigerated until needed, or freeze in individual portions and thaw as required. 3. To serve, warm one portion (about 2 Tbs.) of the applesauce and stir in the oats and milk. Cool slightly and check the temperature before serving.
