This is clone of Outback Steakhouses dipping sauce they serve with their coconut shrimp. Very good stuff!

Steps:

  • Mix ingredients together and serve with Coconut Shrimp.

1/4 cup Grey Poupon mustard
1/4 cup honey
3 -4 drops Tabasco sauce

Steps:

  • Mix marmalade, mustard, horseradish sauce, hot sauce, and salt together in a bowl. Refrigerate until chilled, at least 30 minutes.

Pork Chops with Marmalade Sauce image

Steps:

  • To make the marinade, in a small bowl, combine the marmalade, chili powder, salt, pepper, vinegar, mustard, olive oil, and garlic.
  • Tenderize both sides of the pork with a fork, piercing the meat all the way through about 10 times per side. Place the pork in a large resealable plastic bag or a large bowl and add the marinade. Make sure the pork is coated on all sides. Refrigerate the pork for at least 3 hours and no more than 6 hours.
  • Remove the pork from the refrigerator 30 minutes prior to grilling.
  • Prepare your grill by scraping it, oiling it, and heating it to medium-high heat.
  • Remove the pork chops from the marinade, reserving the marinade, and lay them in the center of the grill. Grill for 3 minutes. Turn the pork chops 45 degrees and grill for another 3 minutes. Flip the pork chops and grill for 3 minutes before turning 45 degrees and cooking an additional 3 minutes for medium. A meat thermometer inserted in the thickest part of the meat should read 125˚F.
  • Transfer the pork chops to a cutting board to rest while you make the sauce. Pour the reserved marinade into a medium skillet. Add the stock and bring to a boil. Boil for 3 minutes.
  • To serve, slice the pork into 1/2-inch-thick slices and drizzle the sauce on top.

3 tablespoons orange marmalade
1 tablespoon chili powder
1 tablespoon kosher salt
1 tablespoon freshly ground black pepper
2 tablespoons cider vinegar
1 tablespoon whole-grain mustard
5 tablespoons extra-virgin olive oil
6 garlic cloves, pressed
4 10-ounce boneless pork chops (ask your butcher for thick-cut pork loin chops)
1 cup Chicken Stock (page 230) or store-bought low-sodium chicken broth

TANGY PINEAPPLE MARMALADE

The horseradish adds a little tang to offset the sweetness. Stir into pulled pork, add a topping to grilled or roasted chicken, fish, or pork, or stir some into fried rice or BBQ sauce. The sky's the limit on ways to serve this.

Tangy Pineapple Marmalade image

Steps:

  • Peel, core, and cut the pineapple into 1-inch chunks. You should have about 5 cups of fruit. Place the pineapple chunks into the bowl of a food processor and pulse until you reach a texture that would be equivalent to roughly shredded.
  • Combine pineapple, sugar, lime juice, and lime zest in a deep saucepan. Bring to a rolling boil over medium heat. Reduce heat to medium-low, and cook, stirring frequently to avoid sticking, until most of the juice has evaporated, and you reach a marmalade consistency, 50 to 60 minutes. Stir in the horseradish, and if necessary, adjust seasoning to suit your taste.
  • Allow marmalade to completely cool and store in the fridge in a covered jar. The marmalade will firm up as it chills.

Steps:

  • In a large, deep, heavy skillet with a lid, over moderately high heat, heat the oil and brown the pork chops for 3 minutes on each side.
  • Remove the chops as they brown, and keep warm in a 180 degree oven.
  • Reserve 3 tbls.
  • of the pan drippings, and pour off the excess.
  • Over moderate heat, with the pan drippings saute the onion, green pepper, celery and garlic, stirring for 5 minutes.
  • Add the tomatoes, tomato paste, beef stock, sugar, bay leaf, oregano, salt and pepper, and stir.
  • Reduce to moderately low heat, cover, and simmer for 30 minutes, stirring occasionally.
  • Return the chops to the skillet and cook covered for 30 minutes more, turning chops once.
  • Transfer the chops to a large, deep, heated platter, pour the sauce over the chops, sprinkle with pasrley and serve.
