You can also fry up red tomatoes with this recipe but make sure they are not over ripe or they will be mushy. Serve these tomatoes outside with a glass of iced tea one summer night and enjoy the sunset with someone you love.

- Slice tomatoes 1/2 inch thick. Discard the ends.
- Whisk eggs and milk together in a medium-size bowl. Scoop flour onto a plate. Mix cornmeal, bread crumbs and salt and pepper on another plate. Dip tomatoes into flour to coat. Then dip the tomatoes into milk and egg mixture. Dredge in breadcrumbs to completely coat.
- In a large skillet, pour vegetable oil (enough so that there is 1/2 inch of oil in the pan) and heat over a medium heat. Place tomatoes into the frying pan in batches of 4 or 5, depending on the size of your skillet. Do not crowd the tomatoes, they should not touch each other. When the tomatoes are browned, flip and fry them on the other side. Drain them on paper towels.

- Trim 1/2-inch from the stem and blossom ends of tomatoes. Slice tomatoes 1/4-inch thick. Season tomato slices with 2 teaspoons salt and 1 teaspoon pepper; set aside.
- In a shallow bowl, whisk together eggs and milk; set aside. In a second shallow bowl, whisk together flour, 1/2-teaspoon salt, and 1/4-teaspoon pepper; set aside.
- Place panko in a shallow bowl along with cornmeal, remaining teaspoon salt, and 1/2-teaspoon pepper; stir to combine and set aside.
- Working with one tomato slice at a time, coat tomatoes with flour mixture, shaking off excess. Coat with egg mixture, followed by breadcrumb mixture. Transfer to a wire rack set over a parchment-lined baking sheet; repeat process with remaining slices.
- Heat 2 cups oil in a 10-inch skillet over medium-high heat until it reaches 350 degrees on a deep-fry thermometer. Working in batches, carefully place tomatoes into the heated oil in a single layer. Fry until golden, turning once, 2 to 3 minutes per side. Drain on a paper towel-lined baking sheet. After frying half of the tomato slices, discard oil and heat remaining 2 cups oil in skillet; continue frying remaining tomato slices. Serve tomatoes immediately with aioli.

- In a small bowl, stir together mayonnaise, lemon juice, and hot sauce. Season with salt and pepper, and set sauce aside.
- Place flour, eggs, and cornmeal each in a separate bowl, and season each with 1/2 teaspoon seafood seasoning.
- Line a large rimmed baking sheet with paper towels. Working with a few slices at a time, dip tomatoes in flour, then eggs, and finally cornmeal.
- In a large saucepan, heat oil over medium. Working in two batches, fry tomatoes until golden brown, about 3 minutes per side; transfer to baking sheet, and sprinkle with salt. Serve immediately with sauce.

I have been making fried green tomatoes for over 35 years, taught by my grandmother who is from down south. - Season tomato slices with salt and pepper.
- Combine flour, 1 teaspoon salt, and 1 teaspoon pepper in a shallow bowl. Pour buttermilk in a second shallow bowl. Mix cornmeal, parsley, paprika, 1 teaspoon salt, 1 teaspoon pepper, and cayenne pepper in a third shallow bowl.
- Dredge each tomato slice in the flour mixture to coat, dip into the buttermilk, and finish by pressing each side of the tomato into the cornmeal mixture to coat. Lay coated tomato slices onto a baking sheet; rest to let tomatoes absorb flavor of coating, 10 to 15 minutes.
- Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
- Gently drop tomato slices into the hot oil and cook until golden brown and floating, 2 to 3 minutes. Drain on a plate lined with paper towel.
- Whisk ranch dressing, cajun seasoning, and hot pepper sauce together in a small bowl; serve with the fried tomato slices.

- Rinse the tomatoes with cool water and pat them dry with paper towels. Slice them into 3/8" thick slices. (That's between 1/4 and 1/2" thick). Do not pat the cut surfaces of the tomato dry with paper towels.
- Pour enough oil into a cast iron or stainless steel skillet to reach a depth of 1/4" to 1/2" . The oil gets too hot for some nonstick skillets. Heat the oil over medium heat until very hot but not smoking. You will know it is ready when you sprinkle a few grains of cornmeal in it and it immediately sizzles. You can also use a candy thermometer if the oil is deep enough. I absolutely love using a digital, no contact infrared thermometer. You just point it at the oil and it reads the temp. Amazing. You want the temperature to be between 360 and 375 degrees. Keep a close watch on the oil while dredging the tomatoes.
- Gather 3 small plates or shallow bowls. I like to use paper plates for the dry mixtures for easy clean up. In one plate, combine the flour and 1/2 teaspoon of the salt. In the second plate, whisk together the milk and egg with a fork. In the third plate, the cornmeal, breadcrumbs, pepper, the remaining 1/2 teaspoon salt and pepper.
- Working with 2 or 3 tomato slices at a time, press the tomato slice into the flour, coating both sides. If the flour doesn't stick to the edge of the tomato, run the edges through the egg/milk mixture, then back in the flour. Dip the flour coated slice into the egg/milk mixture, then gently press it into the cornmeal mixture.
